“You don’t have to see the whole staircase, just take the FIRST STEP.”
Sometimes that’s the hardest thing we’ll ever do. Believe me. Once we take the first step, the ones that follow become just a little easier.
For instance, I admired the steps at my grandparents’ house for a long time. They were these huge steps with this awesome plush pink carpet. What I admired even more was how much taller my humans seemed to be while standing at the top.
I would watch in awe as they walked up and down the steps, dreaming of the day I would get to stand at the top.
For months, I just stood at the bottom. I was blocked by self-doubt, nervousness, and not to mention this white gate that I just couldn’t seem to get around. Then one day, without warning, I noticed the gate was missing. So, I threw that self-doubt to the side and made a run for it.
Before I knew it, there I was, sitting pretty at the top of the steps enjoying the view and taking in all that I accomplished. And of course, I had to celebrate my victory.
These Apple Donuts With Carob Glaze were not only the perfect reward for taking the first step, but also having the courage to go all the way to the top.

For Apple Donuts
- ½ Cup Whole Wheat Flour
- 1 Teaspoon Baking Powder
- ¼ Teaspoon Ground Cinnamon
- ¼ Cup Olive Oil
- ⅓ Cup Unsweetened Applesauce
- 1 Egg
For Carob Glaze
- 2 Tablespoons Carob Powder
- ½ Cup Plain Yogurt
Other Materials
For this recipe, I used the Mrs. Fields “Cutie Donuts Pan” to bake the donuts. However, there are other donut trays that will work.
Instructions
Yields: 20 – 24 Mini Donuts
For Apple Donuts
- Preheat oven to 350°
- In small bowl combine flour, baking powder, and cinnamon. Set aside.
- In large bowl add olive oil, applesauce, and egg. Beat on medium speed until combined.
- Add dry ingredients into the mixture and blend until mixed.
- Fill each mini donut tray cavity with donut batter and bake for 8 – 10 minutes. Donuts are done when you can stick a toothpick into the donut and it comes out clean.
- Allow donuts to cool in the pan prior to adding carob glaze.
- Spread or pipe carob glaze onto the donuts.
For Carob Glaze
- In large mixing bowl beat carob powder and yogurt together on medium speed. Mix until smooth.
- Spread or pipe carob glaze onto the donuts.
Notes
- The Mrs. Fields “Cutie Donuts Pan” was used to get the mini donut shape.
