It’s June and this month is all about being intentional.  Intentional with my time, my life, and my money.  Speaking of money, USA Today published an article stating that 91% of pet parents feel financial stress over the cost of pet ownership.

With the summer season upon us, expenses like pet accommodation fees, travel gear, pet care services, and transportation fees, can really add to the financial strain as we get ready for vacation and to enjoy the “we outside” energy.  So, these Peach Watermelon Mint Pupcakes are dedicated to baking and spending with intention.

ABOUT THE PEACH WATERMELON MINT PUPCAKE INGREDIENTS

The main attraction for these pupcakes is the peach-watermelon-mint combination.  It’s a great kickoff flavor for summer.  Peaches are a great source of vitamin A and fiber.  They are also full of antioxidants.  In small pieces, peaches are a safe treat for your dog.  However, avoid giving your dog the pit, peach fuzz (skin), leaves, or stem as these parts of the peach can make your dog sick.  Also, avoid canned peaches as they contain a lot of sugar.  Watermelon has a high water content, which can help keep your dog hydrated.  Especially, on hot days.  Watermelon is also packed with fiber, which can help with digestion and good gut health.  Mint is a great for your dog’s breath, and in moderation, can have a soothing effect on your dog’s stomach.

Peaches and watermelon are a great flavor for the summer because they’re in season.  These summer fruits are usually more abundant, which makes them a little cheaper.  Lower cost ingredients, especially when you’re baking gourmet treats, are always great for the budget.  As an intentional spender, it’s also a great opportunity to support local groceries, farmers’ markets, and local farmers by purchasing your peaches and watermelon from them.  So, if you’re looking for a seasonal pupcake treat for your dog, these Peach Watermelon Mint Pupcakes are a great flavor.

As with any dog treat, these Peach Mint Pupcakes should be given to your dog in moderation.  They should not replace or serve as your dog’s primary diet.  Please consult with your veterinarian on your dog’s diet.

  • 8 – 10 Mini Pupcakes

Ingredients

Peach Watermelon Mint Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 1/2 Cup Quaker Oats
  • 1/2 Teaspoon Mint
  • 1 Tablespoon Olive Oil
  • 1/3 Cup Plain Yogurt
  • 2 Tablespoons Diced Peach Flesh
  • 2 Tablespoons Diced Watermelon
  • 1 Egg

Peanut “Buttercream” Frosting

  • 1/2 Cup Creamy Peanut Butter (Unsalted with no added sugars)
  • 1/4 Cup Plain Yogurt
  • 1/4 Cup Diced Peach Flesh
  • 1/4 Cup Diced Watermelon

Instructions

For Peach Watermelon Mint Pupcakes

  • 1Preheat oven to 350° F. Line 8 – 10 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour, baking powder, Quaker Oats, and mint. Set aside.
  • 3Peel and remove peach from pit. Dice peaches. Dice peach flesh. Set aside.
  • 4In a large mixing bowl add olive oil, yogurt, diced peach flesh, diced watermelon, and egg. Beat on medium speed about 2 minutes or until combined.
  • 5Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 6Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 7Bake pupcakes for 13 – 15 minutes. Pupcakes are done when you can stick a toothpick into the cake, and it comes out clean. The top of the pupcake should also be firm. If pupcakes aren’t done after 13 – 15 minutes, let them bake for another 2 – 3 minutes. Remove from pan and cool on wire rack.
  • 8Pipe or spread peanut “buttercream” frosting on each pupcake.
  • 9Add 1 teaspoon of diced peaches and watermelon to top of the pupcake.

For Peanut “Buttercream” Frosting

  • 1In a large mixing bowl beat yogurt and peanut butter together on medium speed. Mix until creamy.
  • 2Pipe or spread peanut “buttercream” frosting on each pupcake.
  • 3Add 1 teaspoon of diced peaches and watermelon to top of the pupcake.
