Business plans. Life plans. Workout plans. Eating plans. Shoot, even cell phone data plans. Contrary to popular belief, it’s not people (or pups) who make the world go round. It’s their plans that do.
Now, don’t get us wrong. We absolutely need plans in our lives. Without them we’d have no dreams, ambitions, or desire to do anything. Plans also help our daily activities run smoother. They even encourage consistency, cultivate habits, and create routines. We definitely need these qualities to achieve our goals. However…

How many times have we learned something, made a memory, or had some fun by simply straying away from the original plan?
Let’s face it. Life minus spontaneity equals boredom. For instance, when I was a few months old I decided to dash out the front door before my Mom left for work. No rhyme or reason, just feeling a little adventurous. In those brief 5 minutes, I learned how to make my way down the steps, got to bark at a couple of squirrels, see a different section of the neighborhood, and feel some wind in my face. I even got a few laughs at my Mom trying to catch me. How’s that for spontaneity?
Granted, Mom did finally catch up with me. So, I also learned that darting out the door unexpectedly could also put you in a time out. However, it was worth it. Time outs end. But, memories built on spontaneous moments like this live forever. That’s why…

Ingredients
Apple Pupcakes
- ½ Cup Brown Rice Flour
- 1 Teaspoon Baking Powder
- ¼ Teaspoon Ground Cinnamon
- 1 Tablespoon Olive Oil
- ⅓ Cup Unsweetened Applesauce
- 1 Egg
Peanut Butter Mousse
- ½ Cup Coconut Cream
- 2 Tablespoons Creamy Peanut Butter (unsalted with no added sugars)
- 1 Tablespoons 100% Pure Maple Syrup
Instructions
Yields: 12 Mini Pupcakes
For Apple Pupcakes
- Preheat oven to 350° Line 1.75-inch mini-muffin pan with paper baking cups and set aside.
- In small bowl mix together flour, baking powder, and cinnamon. Set aside.
- In a large mixing bowl add olive oil, applesauce, and egg. Beat on medium speed until combined.
- Add dry ingredients into the mixture and blend until mixed.
- Fill each cupcake liner with 1 tablespoon of pupcake mix and bake for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- Spread or pipe peanut butter mousse on the pupcake.
For Peanut Butter Mousse
- Refrigerate coconut cream over night to allow it to get hard.
- In large mixing bowl beat coconut cream for 45 to 60 seconds until it is light and fluffy.
- Add peanut butter and maple syrup. Blend for approximately 1 minute until all ingredients are combined.
- You can add mousse to pupcakes right away. Or, you can refrigerate approximately 3 to 4 hours to get a mousse consistency.
Notes
- Keep pupcakes refrigerated until you’re ready to serve to your pup. The mousse on the pupcake will melt if it sits out too long.
