Banana Pupcakes With Carob Frosting

So, we pose this question to you. What’s your dream?   Whatever it is, we encourage you to go on that adventure to live it. Whether we believe it or not, the opportunity for a new adventure happens everyday. They are the stories, sonnets, poems, sagas, even dramas that fill up our books of life.

This is why I absolutely love stories. Hence our pupcake stories. Each story represents a new adventure, new experience, and a new opportunity to step outside of my comfort zone. Whether it’s climbing stairs for the first time, dealing with random humans stomping on my roof, experiencing a new pupcake flavor, discovering my twin living in the mirror, or even stealing those fuzzy socks out of Mom’s hamper, I’m always down for a new adventure.

These Banana Pupcakes With Carob Frosting are dedicated to all the new adventures waiting for us and the stories they’ll add to our amazing lives.

Ingredients

Banana Pupcakes

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • 1 Tablespoon Olive Oil
  • 1 Mashed Banana
  • 1 Egg

Carob Frosting

  • ⅓ Cup Plain Yogurt
  • ½ Cup Brown Rice Flour
  • 2 Tablespoons Carob Powder

Instructions

Yields: 8 – 10 Mini Pupcakes

For Banana Pupcakes

  1. Preheat oven to 350° Line 8 – 10 1.75-inch mini-muffin pan with paper bake cups and set aside.
  2. In small bowl mix together flour and baking powder. Set aside.
  3. In a large mixing bowl add olive oil, mashed banana, and egg. Beat on medium speed about 2 minutes or until combined.
  4. Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  5. Fill each cupcake liner with 1 tablespoon of pupcake mix and bake for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  6. Spread or pipe carob frosting onto the pupcakes.

For Carob Frosting

  1. In large mixing bowl beat yogurt, flour, and carob powder together on medium speed. Mix until creamy. Frosting should have the consistency of whipped cream.
  2. Spread or pipe carob frosting onto the pupcakes.
