However, transition can teach us one important life lesson. PATIENCE. In a world full of instant everything, patience can be extremely hard. We know now more than ever why patience is a virtue. Whether it’s taking a class, trying something new, or taking time to reflect, just work on making yourself better everyday. Consistent self-care makes that transition period a little easier and opens up the door to finding the answers all of your questions.
For instance, our first blog post wasn’t Mom’s first attempt at baking pupcakes. It was more like the 7th. The first batch of pupcakes Mom attempted to make didn’t rise at all. The second batch completely stuck to the paper. However, she consistently practiced, continues to get better, and we’ve been blogging for over a year.
Consistency builds endurance and work ethic. It prepares you for any new opportunity that comes your way. Consistency sparks courage as well as evokes creativity and passion. It builds character, tells the world you’re ready for the next step, and readies you for the glow up.
These Apple Blueberry Oatmeal Muffin Pupcakes are dedicated to being consistent and the glow up that’s coming our way because of it.

Ingredients
Apple Blueberry Oatmeal Muffin Pupcakes
- ½ Cup Whole Wheat Flour
- 1 Teaspoon Baking Powder
- ½ Cup Quaker Oats
- 2 Tablespoons Olive Oil
- 1 Tablespoon 100% Pure Maple Syrup
- ⅓ Cup Unsweetened Apple Sauce
- 1 Egg
- 3 Tablespoons Blueberries
Instructions
Yields: 12 – 16 Mini Pupcakes
For Apple Blueberry Oatmeal Muffin Pupcakes
- Preheat oven to 350° Line 12 – 16 1.75-inch mini-muffin pan with paper bake cups and set aside.
- In small bowl mix together flour, baking powder, dried Quaker oats. Set aside.
- In a large mixing bowl add olive oil, maple syrup, applesauce, and egg. Beat on medium speed about 2 minutes or until combined.
- Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
- Stir blueberries into mixture.
- Fill each cupcake liner with 1 tablespoon of pupcake mix.
- Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
