Cinnamon Banana Pancake Dog Treat Recipe; perfect for brunch

What do you bring to the table?

At least that’s what I ask my friends when we get together for our pup-luck brunch.  It’s our annual tradition.  This is our time to laugh, reflect and catch up on all of the gossip we’ve missed due to our pretty busy schedules.  Most importantly, our brunch is our time to share our goals for the year and work out a plan to hold each other accountable. 

We started this pup-luck brunch tradition several years ago as a last minute get together.  However, it has become an absolute must for our pup-squad.  The same rules apply every year.

One of us hosts the event at their place and we all have to contribute one dish.  It doesn’t matter whether you spent hours preparing some gourmet dish that none of us can pronounce or stopped by the pupper-market on the way to pick up a platter you ordered online.  Every pup has to bring to something.

It’s sort of symbolic.  Every dish adds something of value to our meal.  While Cayenne’s omelets are always the perfect blend of ingredients, Ginger’s biscuits are the undisputed biscuit champs, especially when they’re warm.  Cynn’s hotcakes are light and fluffy.  And, my pupcakes are the perfect complement to our brunch meal.

Essentially, our dishes all bring significant value to the table.  No one dish is more valuable than the other.  We all bring something special.  As my best friend Cynn always says…

Bring something to the table, or don’t turn up for brunch.

Most importantly, know what you bring to the table and don’t be afraid to own how good your dish is.  Also, don’t just throw your food on a plate.  Serve it beautifully and take pride in its magic.

At least that’s our pup-luck brunch philosophy.  We also are heavy on the compliments about our dishes.  We believe that everyone needs to be recognized for the value they bring to the table.  No one likes to be taken for granted and we all like to feel appreciated.

Ingredients

Cinnamon Banana Pancake “Pup-Brunch” Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Ground Cinnamon
  • 2 Tablespoons Olive Oil
  • 1 Mashed Banana
  • 1/3 Cup Plain Yogurt
  • 1 Teaspoon Pure Maple Syrup
  • 1 Egg

Maple Peanut Butter Cream Frosting

  • 1/4 Cup Creamy Peanut Butter (unsalted with no added sugars)
  • 3 Tablespoons Plain Yogurt
  • 1 Teaspoon Pure Maple Syrup

Instructions

For Cinnamon Banana Pancake “Pup-Brunch” Pupcakes

  • 1Preheat oven to 350° F. Line 8 – 10 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour, baking powder and cinnamon. Set aside.
  • 3In a large mixing bowl add olive oil, banana, yogurt, maple syrup and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 6Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  • 7Spread or pipe maple peanut butter cream frosting onto the pupcakes.

For Maple Peanut Butter Cream Frosting

  • 1In large mixing bowl beat peanut butter, yogurt and maple syrup together on medium speed. Mix until creamy.
  • 2Spread or pipe maple peanut butter cream frosting onto the pupcakes.
