I learned very early that the gift of laugher is a great tool to have in your back paw.
If you can make someone chuckle, smirk, smile, or laugh until they fall over, you’ll always have a friend. Laughter allows us to live in the moment. As Charlie Chaplin stated…
“A day without laugher is a day wasted.”
My mom is no different. She loves to laugh, so I use it to my advantage. For instance, my pup friend and I love to talk around 10:00 each night. It’s just something we do. After we unwind from a long day of playing with favorite toys, napping, eating, and snuggling with our humans, we finally get some time to just bark it up for a bit.
The problem, I’m guessing, is that barking it up with each other at nighttime doesn’t sit too well with humans. Sure, our chats get intense, but they have to be quick before our humans break it up. I can always see my mom coming to quiet me down from the corner of my eye. So, as soon as I see her coming, I just roll on my back, stick out my tongue, and turn on the cute puppy eyes. It makes her laugh every time.

Ingredients
Banana Carob Chip Pupcakes
- ½ Cup Brown Rice Flour
- 1 Teaspoon Baking Powder
- ¼ Cup Olive Oil
- ⅓ Cup Plain Yogurt
- ⅓ Cup Mashed Banana (1 Banana)
- 2 Tablespoons Carob Chips
- 1 Egg
Carob Cream Frosting
- ¼ Cup Cream Cheese
- ⅓ Cup Plain Yogurt
- ½ Cup Brown Rice Flour
- 2 Tablespoons Carob Powder
Instructions
Yields: 16 – 20 Mini Pupcakes
For Banana Carob Chip Pupcakes
- Preheat oven to 350° Line 16 – 20 1.75” inch mini-muffin pan with paper bake cups and set aside.
- In small bowl mix together flour and baking powder. Set aside.
- In a large mixing bowl add olive oil, yogurt, mashed bananas, carob chips, and egg. Beat on medium speed about 2 minutes or until combined.
- Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
- Fill each cupcake liner with 1 tablespoon of pupcake mix and bake for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- Spread or pipe carob cream frosting onto the pupcakes.
For Carob Cream Frosting
- In large mixing bowl beat cream cheese, yogurt, flour, and carob together on medium speed. Mix until creamy. Frosting should have the consistency of whipped cream.
- Spread or pipe carob cream frosting onto the pupcakes.
