Perfect for when mom is doing the laundry.
Every few weeks, mom pulls out all of her dirty clothes, separates them into a few different piles, and washes them. Although my mom sees this as just another chore, I find it quite entertaining. All those piles of clothes on the floor. It’s so hard not to jump in one and roll around.
Sometimes I swipe a sock from the pile. But somehow, I always get caught. I LOVE socks by the way. However, this week’s laundry day was a bit different.
Instead of watching mom separate clothes, I got to sample this yummy carrot cake pupcake with cream cheese frosting.
And if there’s one thing that can get my attention, it’s a tasty little treat straight from the oven. I mean, just look at these beauties. I’ll take these pupcakes over a sock any day.

Ingredients
For Carrot Cake Pupcake
- ½ Cup Whole Wheat Flour
- 1 Teaspoon Baking Powder
- ½ Teaspoon Ground Cinnamon
- 1 Tablespoon Olive Oil
- ⅓ Cup Unsweetened Applesauce
- 2 Tablespoons Shredded Carrots
- 1 Egg
For Cream Cheese Frosting
- ¼ Cup Cream Cheese
- ⅓ Cup Plain Yogurt
- ¼ Cup 100% Pure Cornstarch
Instructions
Yields: 8 – 10 Mini Pupcakes
For Carrot Cake Pupcake
- Preheat oven to 350° Line 8 – 10 1.75” inch mini-muffin pan with paper bake cups and set aside.
- In small bowl mix together flour, baking powder, and cinnamon. Set aside.
- In a large mixing bowl add olive oil, applesauce, carrots, and egg. Beat on medium speed until combined.
- Add dry ingredients into the mixture and blend until mixed.
- Fill each cupcake liner with 1 tablespoon of cupcake mix and bake for 12 minutes. Cupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- Spread or pipe cream cheese frosting on the pupcake.
For Cream Cheese Frosting
- In large mixing bowl beat cream cheese and yogurt together on medium speed. Mix until smooth.
- Gradually add in cornstarch. Beat on high until creamy. Frosting should have the consistency of whipped cream.
Notes
- For garnish, you can add a few pieces of shredded carrots and ground flaxseed to the top of the frosted pupcake.
