This, my loves, is a true testament to our legacy. Essentially, our legacy is our gift to the world. Not to be mistaken with our talents. Our talents are those things we do well. And, if we practice those talents they can move from good to great. However, our legacy runs much deeper than a few hours of practice. They are the big and little things we do for ourselves and others throughout our day. Not just through artistic forms such as poetry, music, and art, but also through how we show love and caring for those around us. Our legacies live on through the good we do and the way we make people feel.
Our legacies are also our purpose. My purpose in particular is to make sure that everyone knows that someone loves them unconditionally. That’s why I make a point of immediately greeting anyone that I meet. I also make it a point to let any human who wants to love over me for a few seconds feel free to do so.
These Carrot Pupcakes With Peanut Butter Frosting are dedicated to those pups that love to give love.

Ingredients
Carrot Pupcakes
- ½ Cup Whole Wheat Flour
- 1 Teaspoon Baking Powder
- 1 Tablespoon Olive Oil
- ⅓ Cup Unsweetened Applesauce
- 2 Tablespoons Shredded or Chopped Carrots
- 1 Tablespoon 100% Maple Syrup
- 1 Egg
Peanut Butter Frosting
- ¼ Cup Creamy Peanut Butter (unsalted with no added sugars)
- 3 Tablespoons Plain Yogurt
Instructions
Yields: 12 Mini Pupcakes
For Carrot Pupcakes
- Preheat oven to 350° F. Line 12 1.75-inch mini-muffin pan with paper bake cups and set aside.
- In small bowl mix together flour and baking powder. Set aside.
- In a large mixing bowl add olive oil, applesauce, carrots, maple syrup, and egg. Beat on medium speed about 2 minutes or until combined.
- Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
- Fill each cupcake liner with 1 tablespoon of pupcake mix and bake for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- Spread or pipe peanut butter frosting onto the pupcakes.
For Peanut Butter Frosting
- In large mixing bowl beat peanut butter and yogurt together on medium speed. Mix until creamy. Frosting should have the consistency of whipped cream.
- Spread or pipe peanut butter frosting onto the pupcakes.

I made this recipe but made few changes and the cupcakes come fluffy. I used about half cup of grated carrots and two tablespoons of plain yogurt. 1/2 tsp of cinnamon. Very good flavor and very soft.
