Nightmares. Who knows where they come from or why they even exist. All I know is that I hate them. They put a damper on such an awesome nap and completely interrupt my pleasant dreams. Now, don’t get me wrong. I don’t have them often, but when I do…

I usually end up screaming with tears dripping from my eyes.

One day, I was having the most pleasant dream of chasing squirrels. Then as soon as I was about to catch one, I find myself sitting in a vet’s office looking at this huge needle. It also didn’t help that I heard a fellow pup screaming in the next room.

I must have started screaming in real life because next thing I knew, Mom was sitting right beside me telling me to wake up. As soon as I saw her face I was so relieved. Afterwards, I just crawled right onto her lap and went back to sleep. My theory…

“Don’t stop dreaming just because you had a nightmare.”

Especially, since my dreams always outweigh those silly nightmares. I love dreaming about laying in the sun, running like the wind, and of course pupcakes. Plus, Mom always shows up right when I need her. So, I guess there’s really no need to be afraid of those nightmares anyway.

Later that day Mom gave me one of these tasty Cinnamon Blueberry Pancake Pupcakes With Maple Cream Frosting, which helped me forget about that huge needle and my horrible nightmare.

Ingredients

Cinnamon Blueberry Pancake Pupcake Bites

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Ground Cinnamon
  • ¼ Cup Olive Oil
  • ⅓ Cup Plain Yogurt
  • 2 Tablespoons Blueberries
  • 2 Tablespoons 100% Pure Maple Syrup
  • 1 Egg

Maple Cream Frosting

  • ¼ Cup Cream Cheese
  • ⅓ Cup Plain Yogurt
  • ½ Cup Brown Rice Flour
  • 2 Tablespoons 100% Pure Maple Syrup

Instructions

Yields: 12 – 16 Mini Pupcakes

For Cinnamon Blueberry Pancake Pupcakes

  1. Preheat oven to 350° Line 12 – 16 1.75” inch mini-muffin pan with paper bake cups and set aside.
  2. In small bowl mix together flour, baking powder, and cinnamon. Set aside.
  3. In a large mixing bowl add olive oil, yogurt, blueberries, and egg. Beat on medium speed about 2 minutes or until combined.
  4. Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  5. Fill each cupcake liner with 1 tablespoon of pupcake mix and bake for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  6. Spread or pipe maple cream frosting onto the pupcakes.
  7. Add one blueberry for garnish (optional)

For Maple Cream Frosting

  1. In large mixing bowl beat cream cheese, yogurt, flour, and maple syrup together on medium speed. Mix until creamy. Frosting should have the consistency of whipped cream.
  2. Spread or pipe maple cream frosting onto the pupcakes.
