Ginger Roll Pupcakes

It’s amazing how an aroma can just light up a room.

In our house, the best aromas usually come from the kitchen. Whenever Mom is in the kitchen, I find myself floating towards the smell just to get a peak at what she’s cooking. God bless this little nose that I have. It always leads me in the right direction—the kitchen. Not only does it guide me to where the good food is, but from time to time those smells warm my heart and trigger beautiful memories.

For instance, the encompassing fragrance of ginger always reminds me of the first time Mom and I met, and I entered my forever home for the first time. It was the week of Thanksgiving and Mom had been cooking to get ready for Thanksgiving dinner. That smell of ginger always reminds me of the first time I knew I was home.

Aroma; fragrance; scents; equal nostalgia. Nostalgia is the moments we lose ourselves in the feeling of a happy memory. For a brief moment, nostalgia warms are heart and makes time seem endless. For once, those memories aren’t as far away as we thought they once were.

The kitchen is a great space to spark a little nostalgia. It’s the space where aromas capture a feeling and make everyone within smelling distance feel comfort. Ingredients

For Ginger Roll Pupcakes

  • 1 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • ¼ Cup Water
  • ¼ Cup Olive Oil
  • 1 Tablespoon Maple Syrup
  • 1 Teaspoons Ginger
  • 1 Egg

For Ginger Roll Pupcake Glaze

  • ⅓ Cup Plain Yogurt
  • ⅛ Teaspoon Ginger
  • 1 Tablespoon Maple Syrup

Instructions

Yields: 12 – 14 Mini Ginger Roll Pupcakes

 For Ginger Roll Pupcakes

  1. Preheat oven to 350°
  2. In large bowl combine flour and baking powder. Set aside.
  3. In a small bowl add water, olive oil, and egg. Add to large bowl with dry ingredients and stir until you have soft dough.
  4. On a lightly floured surface, roll or pat dough into a rectangle (approximately 8 x 14 inches)
  5. Drizzle maple syrup and sprinkle ginger onto flat dough.
  6. Roll dough starting at a long edge (jelly-role style) and pinch the edge to seal.
  7. Using a sharp serrated knife, slice rolled dough into half-inch thick slices. Place each slice into a 1.75-inch mini-muffin pan and bake for 15 minutes. Pupcakes are finished when they are springy to the touch.
  8. Once cooled, spread or pipe ginger roll pupcake glaze onto the pupcakes.

For Ginger Roll Pupcake Glaze

  1. In large mixing bowl beat yogurt, ginger, and maple syrup together on medium speed. Mix until smooth.
