I’m sure we’ve all heard of Murphy’s Law.
Sometimes, what can go wrong will definitely go wrong. And, there’s nothing more frustrating than having to deal with it. Especially, if we need to figure something out at the last minute.
I’ve made it very clear that my goal is to continue to build my pupcake portfolio. It’s how I measure my wealth. But when I first started out on this pupcake building journey, I never imagined that there might actually be hiccups along the way.
When Mom decided to bake pupcakes, I was super excited. I watched her in the kitchen as she measured, poured and mixed her way to making the first batch of pupcakes. My nose was in heaven as I smelled those pupcakes baking in the oven. I couldn’t wait to get this pupcake portfolio started.
When she finally pulled those pupcakes out of the oven, I scurried over to the kitchen door only to find that those pupcakes were burnt and didn’t rise at all. You see, mom took one of her human recipes and tried to adapt it to fit my pup palette. However, it didn’t work.
I thought to myself, “who wants those?”
I definitely wasn’t going to eat them. Not to mention that now I had to put my wealth building on hold. When I made this goal for myself, I was so focused on achieving the goal that I didn’t consider that things may go wrong in the process. I thought to myself…
Keep your eyes on the prize. Share on XHowever, in this moment that statement seemed so cliché. It’s so hard to keep your eyes on the prize when things don’t go exactly as you plan. It’s even harder when it seems you’re so close to achieving it and then you have to map out a new strategy right on the spot. So, I pose this trick when you’re mapping out your goals…
Map out one or two things that could go wrong and how you could solve them.
David Bach makes that suggestion in his book Smart Women Finish Rich. It’ll help you prepare yourself to handle any of those “life” happenings so they won’t throw you off. It’ll also help you stay focused on reaching your goal.
Now, don’t get me wrong. It’s impossible to plan for everything that could go wrong. However, identifying one or two things will keep you more optimistic when some of those “Oh, sh—” moments come your way as you’re working towards your goal. It’ll also lessen the frustration of defeat and help you feel that you have power over the situation.
For instance, Mom could’ve considered that the first batch of pupcakes wouldn’t turn out the way we wanted them. Her solution to that issue might’ve been to purchase more ingredients, have more than one recipe ready, or even buy a store bought pupcake for me to eat.
And, like most things go. If she had been prepared to mess up the recipe, those pupcakes would’ve come out perfect. That’s how it always happens.

Ingredients
Apple Ginger Oatmeal Muffin Pupcakes
- ½ Cup Brown Rice Flour
- 1 Teaspoon Baking Powder
- ½ Cup Quaker Oats
- 2 Teaspoons Ground Ginger
- 2 Tablespoons Olive Oil
- ⅓ Cup Unsweetened Applesauce
- 1 Teaspoon Pure Maple Syrup
- 1 Egg
Instructions
Yields: 12 – 14 Mini Pupcakes
For Apple Ginger Oatmeal Muffin Pupcakes
- Preheat oven to 350° F. Line 12 – 14 1.75-inch mini-muffin pan with paper bake cups and set aside.
- In small bowl mix together flour, baking powder, dried Quaker oats and ginger. Set aside.
- In a large mixing bowl add olive oil, applesauce, maple syrup and egg. Beat on medium speed about 2 minutes or until combined.
- Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
- Fill each cupcake liner with 1 tablespoon of pupcake mix.
- Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
