It’s the moment where we may even be a little bit fearful, but we take the chance to go after what we want anyway. Yes, our stretch is always a little uncomfortable, but that’s the beauty of it. That’s why we have to find a little comfort in being uncomfortable. Our stretch is a tool. Use it to show yourself what you can do and how far you can really go. Anyone that has experienced any type of success continues to stretch outside of her comfort zone.

My stretch, believe it or not, was learning how to sleep alone in my own bed. For the first few weeks of my life, I was used to snuggling up with my sister and brother. While I knew right away that Mom and I would be perfect together, my first few nights in her apartment were not easy. Every sound was different, the nighttime darkness felt more secluded; and my bed just didn’t feel the same.

I whined, whimpered, and cried the whole night for 5 days straight, robbing both Mom and me from any type of sleeping. However, through a little patience from Mom, I was able to stretch through my discomfort and sleep in my bed through the night.

These Pumpkin Pupcakes With Peanut Butter Frosting are dedicated to embracing our stretch and basking in the beauty of it.

Ingredients

For Pumpkin Pupcakes

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • 1 Tablespoon Olive Oil
  • ⅓ Cup Pumpkin Puree
  • ⅓ Cup Yogurt
  • 1 Tablespoon Pure Honey
  • 1 Egg

Peanut Butter Frosting

  • ¼ Cup Creamy Peanut Butter (unsalted with no added sugars)
  • 3 Tablespoons Plain Yogurt

Instructions

Yields: 12 – 15 Mini Pupcakes

For Pumpkin Pupcakes

  1. Preheat oven to 350° Line 12 – 15 1.75-inch mini-muffin pan with paper bake cups and set aside.
  2. In small bowl mix together flour and baking powder. Set aside.
  3. In a large mixing bowl add olive oil, pumpkin puree, yogurt, honey, and egg. Beat on medium speed about 2 minutes or until combined.
  4. Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  5. Fill each cupcake liner with 1 tablespoon of pupcake mix and bake for 12 to 15 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  6. Spread or pipe peanut butter frosting onto the pupcakes.

For Peanut Butter Frosting

  1. In large mixing bowl beat peanut butter and yogurt together on medium speed. Mix until creamy. Frosting should have the consistency of whipped cream.
  2. Spread or pipe peanut butter frosting onto the pupcakes.
