We’ve got our dessert routine down to a science. First, I go into my corner and eat dinner out of my favorite blue bowl, while mom sits at her dining room table and eats hers.

After I lick my bowl clean, I wait patiently for her to finish her dinner. Then, she puts a yummy little dessert into my blue bowl, and proceeds to eat hers.

If you haven’t guessed, we absolutely LOVE dessert. And, why would you deny yourself of something you love?

Ingredients

Raspberry Pupcakes

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • ¼ Cup Olive Oil
  • ⅓ Cup Plain Yogurt
  • 2 Tablespoons Puréed Raspberries
  • 1 Egg

Raspberry Cream Cheese Frosting

  • ¼ Cup Cream Cheese
  • ⅓ Cup Plain Yogurt
  • ½ Cup Brown Rice Flour
  • 2 Tablespoons Puréed Raspberries

Instructions

Yields: 12 Mini Pupcakes

For Raspberry Pupcakes

  1. Preheat oven to 350° Line 12 1.75” inch mini-muffin pan with paper bake cups and set aside.
  2. In the blender, purée about 12 raspberries for approximately 1 minute. Set aside.
  3. In small bowl mix together flour and baking powder. Set aside.
  4. In a large mixing bowl add olive oil, yogurt, 2 tablespoons puréed raspberries, and egg. Beat on medium speed about 2 minutes or until combined.
  5. Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  6. Fill each cupcake liner with 1 tablespoon of pupcake mix and bake for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  7. Spread or pipe raspberry cream cheese frosting onto the pupcakes.

For Raspberry Cream Cheese Frosting

  1. In large mixing bowl beat cream cheese, yogurt, flour, and remaining 2 tablespoons puréed raspberries together on medium speed. Mix until creamy. Frosting should have the consistency of whipped cream.
  2. Spread or pipe raspberry cream cheese frosting onto the pupcakes.
