Mom has spent the last several weeks working on a new project.
And you know what that means? A lot of late nights and early mornings. There’ve been days where it seems she barely gets any real sleep at all. Needless to say, it’s been a long couple of weeks for her.
Even though it’s been a rough couple of weeks, she’s even managed to squeeze in a little quality time with me. Honestly, I have no idea how she does it. I’d probably be exhausted by now. Believe me. I’m no good without my four naps a day.
I actually admire her grit. Her hard work. Her drive. If I could purchase her a gift, I definitely would. However, my currency comes in pupcakes. And while they’re the best currency I could every ask for, they don’t take that as payment in a regular store.
So, this weekend, I’m giving Mom the gift of an extra few hours of sleep. It’s something she truly deserves and needs. There’ll be no barks telling her to get up after she hits the snooze button a few times. There’ll be no pawing at her bed forcing her to move. I have no problem waiting a few extra hours before we go for a walk to give her a chance to actually rest.
Giving is more than a feeling. Issa a vibe.
And, that vibe is so powerful that it passes on from one human (or pup) to the next. That’s why it’s important for all of us to keep doing it.
I once heard someone say that “it’s better to give than it is to receive.” True. I’ve also heard humans say that “giving can be one of the most rewarding experiences of your life.” Also, true. However, giving is not just about the big extravagant presents we may receive.
Giving is also about those little things that we take for granted. Like the smile you give to someone as you walk down the street. It’s the genuine respect you show to others. It’s listening to your friend tell the same boring story over and over again just because you know it gives them joy to tell it.
In my world, it can even mean letting a new human give you a quick pet on the head to give them a reason to smile that day. Giving is the connection that bonds us, even if it’s just for a moment. Even if we’ve never met. Giving allows us to genuinely show we care about others.
I also encourage you to do more than give to others. Also, remember that it is equally as important to give to yourself. As much as you can, take time to give yourself those same little things. A simple wink in the mirror. A chance to relax. An excuse to indulge a little in your favorite dessert. Giving to yourself is the best way to continue to connect with who you are inside, which ultimately leads you to a place of fulfillment.

- 12 - 14 Mini Pupcakes
Ingredients
Sweet Potato Blueberry Pupcakes
- 1/2 Cup Whole Wheat Flour
- 1 Teaspoon Baking Powder
- 2 Tablespoons Olive Oil
- 1/3 Cup Pureed Sweet Potatoes
- 1/3 Cup Plain Yogurt
- 1 Egg
- 1/4 Cup Blueberries
Coconut Cream Frosting
- 1/2 Cup Coconut Cream
Instructions
For Sweet Potato Cranberry Pupcakes
- 1Preheat oven to 350° F. Line 12 – 14 1.75-inch mini-muffin pan with paper bake cups and set aside.
- 2In small bowl mix together, flour and baking powder. Set aside.
- 3In a large mixing bowl add olive oil, pureed sweet potatoes, yogurt and egg. Beat on medium speed about 2 minutes or until combined.
- 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
- 5Stir in blueberries.
- 6Fill each cupcake liner with 1 tablespoon of pupcake mix.
- 7Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- 8Spread or pipe coconut cream frosting onto the pupcakes.
- 9Add 3 blueberries on each pupcake for garnish (optional)
For Coconut Cream Frosting
- 1Refrigerate coconut cream over night to allow it to get hard.
- 2In large mixing bowl beat coconut cream for 45 to 60 seconds until it is light and fluffy.
- 3Spread or pipe coconut cream frosting onto pupcakes.
