Sugar Takes Charge Of Her PMS & Indulges In These Carob Zucchini Pupcakes

There are essentially three levels to my PMS.

In level one, this pup is cool, calm and collected.  Everything is business as normal and there are no signs that PMS ever existed.  Then there’s level two.  PMS is there, but I can manage.  It may be a bit of a struggle, but I can honestly push through without anyone noticing it.  But then there’s level three.

Level three PMS is a true nightmare.  Nothing goes right, and everything sucks.  One minute I can be whimpering at the dog eating his favorite meal on television, and the next minute I’m utterly annoyed at the pup next door as I hear her loud paws go stomping down the steps in front of my window.  I can be extremely exhausted and a nap goes from a luxury to an absolute must.

I’m sure you’ve heard of PMS.  We all have.  Pup Moodiness Syndrome.

It comes every month, and never shows up at the right time.  In my case, I pray for a level one and will even accept a level two.  However, those level threes can make the life of a pup business owner a little bit of a struggle.  I mean, who can actually get work done if they are riding the Pup Moodiness Syndrome rollercoaster.

One day PMS went too far when I found myself barking nonstop at another pup in my office for taking my seat in a meeting.  You see, I learned early on that there is no room for PMS in the pup-business world.

While male pups choose to ignore it, our humans don’t even know it actually exists.  But, in the words of Lemony Snicket…

Just because you don’t understand it, doesn’t mean it isn’t so.

So, if I wanted to become a successful pup-business woman, I was going to have to learn to control my PMS instead of it controlling me.

Therefore, if I needed to take a day to stew in my emotions, I would do it.  I decided I would wear my best pup-fit on those days where I couldn’t stand to look at myself in the mirror.  And if I wanted to comfort myself with one extra pupcake morsel, I was going to do it.

I also built strategy into managing PMS.  I would never make major decisions during that time if it could be avoided.  That way I could pull the emotion out of it.  I even try to spend time with friends to avoid that dreaded PMS isolation. 

Whatever I needed to do to make myself feel better was going to be the move.  And, my slight change in strategy worked.

I noticed those level three PMS days became few and far between, while level ones and twos help calm my little pup mood.  So, in honor of PMS comfort food…

  • 10 - 12 Mini Pupcakes

Ingredients

Carob Zucchini Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Carob Powder
  • 2 Tablespoons Olive Oil
  • 1/3 Cup Plain Yogurt
  • 1 Egg
  • 1/4 Cup Diced Zucchini

Carob Peanut Butter Cream Frosting

  • 1/4 Cup Carob Powder
  • 3 Tablespoons Plain Yogurt
  • 2 Tablespoons Creamy Peanut Butter (unsalted with no added sugars)
  • 5 - 6 Sliced Zucchini (Optional)

Instructions

For Carob Zucchini Pupcakes

  • 1Preheat oven to 350° F. Line 10 – 12 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour, baking powder and carob powder. Set aside.
  • 3In a large mixing bowl add olive oil, yogurt and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Stir in diced zucchini.
  • 6Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 7Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  • 8Spread or pipe carob peanut butter cream frosting onto the pupcakes.
  • 9Place half zucchini slice on top of frosting for garnish (optional).

For Carob Peanut Butter Cream Frosting

  • 1In large mixing bowl beat carob powder, yogurt and peanut butter together on medium speed. Mix until creamy.
  • 2Spread or pipe carob peanut butter cream frosting onto the pupcakes.
  • 3Slice each zucchini slice in half (optional).
  • 4Place half zucchini slice on top of frosting for garnish (optional).
