Cynn and I have been best friends since we were baby pups.

We played together as kids and roomed together in college, shout out to Huffton University.  And now, we’re navigating this pup-adulting life together.  She’s definitely more than a best friend, Cynn is my sister.

That’s why I thought it was strange when I hadn’t heard from her in a couple of weeks.  We usually talk a few times  a week.  Did she lose her phone again?  Was she on a business trip I forgot about?  I knew she was working on a project for work, but it was still strange that I hadn’t heard from her.

So, like most sisters do when their pup-tuition sets in, I went by her house for a visit.  No text.  No call.  Just grabbed a few pupcakes I had in the house, got in my car and drove over to see her. 

The moment Cynn opened the door, I could look at her face and tell she was stressed.  She was happy to see me, but was so frantic as she explained why she’d gone MIA.

I sat with her at her kitchen and listened to her as she rattled off all the things she had to get done on her to-do list.  She panicked about all of the deadlines she had to meet for her project at work.  And between panics, Cynn complained about how much she hated her job, felt like she had no social life and feeling like she needed a change.

This was odd for me.  Cynn was always the one who helped me keep my emotions in check.  She was my sounding board.  Now, it was my turn to bring her back to reality a bit.  Like they always say…

You can’t pour from an empty cup so, take care of yourself first.

In this moment, I realized that it was my job to help Cynn see that logic.  So, after I calmed her down a little, I opened up the container of pupcakes I brought with me so we could indulge a little.  Burnout is real.  And clearly, she needed something sweet to help her relax. 

Over the next 2 hours we indulged in pupcakes, did a little soul searching and helped Cynn map out a growth plan for herself.  Each idea sparked another.  The deeper we got into Cynn’s growth plan, the more relax she seemed to become. 

As I drove home that night, I realized that I could take my love for pupcakes and use it as leverage to cure burnout.  The only question now is figuring out what that looks like as a business.  However, the road to starting my own business was becoming a little clearer.

  • 10 - 12 Mini Pupcakes

Ingredients

Carob Peppermint Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Carob Powder
  • 1 Teaspoon Peppermint Leaves
  • 2 Tablespoons Olive Oil
  • 1/3 Cup Plain Yogurt
  • 1 Egg
  • 1/4 Cup Carob Chips (Optional)

Coconut Cream Frosting

  • 1/2 Cup Coconut Cream

Instructions

For Carob Peppermint Pupcakes

  • 1Preheat oven to 350° F. Line 10 – 12 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour, baking powder, carob powder and peppermint leaves. Set aside.
  • 3In a large mixing bowl add olive oil, yogurt and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 6Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  • 7Spread or pipe coconut cream frosting onto the pupcakes.
  • 8Sprinkle carob chips on top of pupcakes for garnish (optional)

For Coconut Cream Frosting

  • 1Refrigerate coconut cream over night to allow it to get hard.
  • 2In large mixing bowl beat coconut cream for 45 to 60 seconds until it is light and fluffy.
  • 3Spread or pipe coconut cream frosting onto pupcakes.
  • 4Sprinkle carob chips on top of pupcakes for garnish (optional)
