Tap In: How To Bake Carob Pupcakes

Ok, ya’ll.  It’s time to tap in (tap, tap, tap in) to these Carob Pupcakes.

And, a little something extra to go along with them.  One of my fellow Huffton University Alum, Coco, got together with me yesterday for dinner.  Coco lives out of state, so we haven’t seen each other in a long time.

During dinner, she told me that she finally decided that she was ready to start her own travel company, Le CocoTour.  The goal of Le CocoTour is to coordinate travel excursions for pups who love a little adventure.

Le CocoTour has been a daydream of Coco’s for years.  However, like most pups do, she put her “crazy idea” on hold to focus on everyone else’s dreams and aspirations.  But, here she is ready to bring her “crazy idea” to life.

As a fellow “crazy idea” chaser, Coco asked me for advice as she embarked on this new journey of hers.  I expressed to her “Love yourself through it.”  There will be so many twists, turns, and learning curves as you work towards your dream.  So, it’s important that you barking love yourself every step of the way.

After our bark-versation, I decided to do something a little different with my pupcakes for the rest of the month.  I’d add a note of encouragement, or shall I say bark-firmation, to each and every pupcake box from Pupcake Sugar.  This way pups can practice a little self-love with every pupcake.

So, these Carob Pupcakes are dedicated to loving yourself through every part of your “crazy idea” journey.  Because, you got this.

  • 8 – 10 Mini Pupcakes

Ingredients

Carob Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Carob Powder
  • 1 Tablespoon Olive Oil
  • 1/2 Cup Plain Yogurt
  • 2 Tablespoon Water
  • 2 Tablespoons Creamy Peanut Butter (Unsalted with No Added Sugars)
  • 1 Egg

Carob “Butter Cream” Frosting

  • 1/2 Cup Creamy Peanut Butter (Unsalted with No Added Sugars)
  • 6 Tablespoons Plain Yogurt
  • 3 Tablespoons Carob Powder

Instructions

For Carob Pupcakes

  • 1Preheat oven to 350° F. Line 8 – 10 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour, baking powder, and carob powder. Set aside.
  • 3In a large mixing bowl add olive oil, yogurt, water, peanut butter, and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 6Bake pupcakes for 13 – 15 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. The top of the pupcake should also be firm. If pupcakes aren’t done after 13 – 15 minutes, let them bake for another 2 – 3 minutes. Remove from pan and cool on wire rack.
  • 7Pipe or spread carob “butter cream” frosting on each pupcake.

For Carob “Butter Cream” Frosting

  • 1In large mixing bowl beat carob powder, yogurt and peanut butter together on medium speed. Mix until creamy.
  • 2Spread or pipe carob “butter cream” frosting on each pupcake.
