Sweet Potato Pupcakes With Maple Cream Cheese Frosting

Perfect after a trip to the salon and a day of pampering.

Every few weeks, my mom drops me off at the salon to get my hair done. For the next few hours, my hair is washed, trimmed, brushed, sprayed, and don’t forget a nice nail clipped. And the pièce de résistance…two colorful bows that make me fierce in any season.

Although I love the final look, I’m exhausted by the time I get home. It takes a lot of energy and effort to look this cute.

Ingredients

For Sweet Potato Pupcakes

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Ground Cinnamon
  • 1 Tablespoon Olive Oil
  • ¼ Cup Whipped Sweet Potatoes
  • ⅓ Cup Yogurt
  • 1 Egg

For Maple Cream Cheese Frosting

  • ¼ Cup Cream Cheese
  • ⅓ Cup Plain Yogurt
  • ½ Cup Brown Rice Flour
  • 2 Teaspoons 100% Maple Syrup

Instructions

Yields: 12 Mini Pupcakes

For Whipped Sweet Potato

  1. Fill a 1½ quart pot with water, and bring to a rolling boil. Once boiled, add both unpeeled sweet potatoes. Cook 1 sweet potato for approximately 20 – 25 minutes until tender. Remove from heat, and peel skin off sweet potatoes while they’re still warm.
  2. Place sweet potatoes in a large mixing bowl and whip on medium speed until creamy.
  3. Measure ¼ cup of whipped sweet potato. Set aside. Freeze remaining sweet potatoes to be used for later.

For Sweet Potato Pupcakes

  1. Preheat oven to 350° Line 12 1.75” inch mini-muffin pan with paper bake cups and set aside.
  2. In small bowl mix together flour, baking powder, and cinnamon. Set aside.
  3. In a large mixing bowl add olive oil, sweet potato, yogurt, and egg. Beat on medium speed until combined.
  4. Add dry ingredients into the mixture and blend until mixed.
  5. Fill each cupcake liner with 1 tablespoon of cupcake mix and bake for 12 Cupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  6. Spread or pipe maple cream cheese frosting on the pupcake.

For Maple Cream Cheese Frosting

  1. In large mixing bowl beat cream cheese, yogurt, flour, and maple syrup together on medium speed. Mix until creamy. Frosting should have the consistency of whipped cream.
