Sometimes a recipe just falls flat.
A few weeks ago, I was at a pup networking event. It was the first of many back to back events that I had decided to go to in order to meet and expand my circle of pups. At this event, I met a pup that got a chance to sample one of my prize winning pupcakes from the bake off at The Lounge a few weeks prior.
The pup raved about how delicious my pupcakes were. She also mentioned that she couldn’t wait until I opened my boutique pupcake bakery so that she could try more. And then it dawned on me. I still needed to develop my menu.
It was a no brainer to know that I would include the pupcake flavor I used to win the bake-off at The Lounge. But, a pupcake boutique cannot survive on one pupcake alone. So, since my human was spending the Saturday out with her friends, I decided to seclude myself in the kitchen and try some pupcake recipes for my menu.
To be honest, planning out a menu was a lot harder than it looks. It’s one thing to bake a pupcake here and there. However, it’s another thing to actually plan a menu that caters to a variety of taste preferences.
I spent hours in the kitchen working on one recipe. And, these hours were far from smooth sailing. The first time I tried the pupcakes they were entirely too sweet. So, I decided to try the recipe again. The second time I baked the pupcakes, I cooked them too long. So, they came out a little harder than usual. During the third time around, I was so frustrated that I accidently mixed up my measurements, so the pupcakes didn’t even rise.
After a long day of baking, not only did my paws hurt from standing all day, I had nothing to show for it. No pupcake to eat. No new pupcake flavor to get excited about. I was completely frustrated and disappointed.
I actually began to think about giving up on the idea of a pup business ownership altogether. How could I possibly open a pupcake boutique, if I can’t manage to get one pupcake recipe right? However, as Nelson Mandela stated…
It always seems impossible until it’s done.
I had to remind myself that this is simply the product development state of my pup business. Every pup business owner goes through this at some point. Product development is nothing more than turning the seemingly “impossible” into an actual reality.
Product development also takes extreme patience as you work through the ups and downs of experimenting. It also requires pup self-empathy as you go through trial and error. It’s ok if it doesn’t work out the first time. Just don’t be afraid to try again.
So, like any other pup would do in this situation, I took a nap. After I had a little snooze my energy was restored, and I knew I’d try again the next day. And you know what? The recipe actually worked.

- 12 – 14 Mini Pupcakes
Ingredients
Apple Blueberry Pupcakes
- 1/2 Cup Whole Wheat Flour
- 1 Teaspoon Baking Powder
- 2 Tablespoons Olive Oil
- 1/3 Cup Unsweetened Applesauce
- 1 Tablespoon Pure Honey
- 1 Egg
- 1/4 Cup Blueberries
Coconut Cream Frosting
- 1/2 Cup Coconut Cream
Instructions
For Apple Blueberry Pupcakes
- 1Preheat oven to 350° F. Line 12 – 14 1.75-inch mini-muffin pan with paper bake cups and set aside.
- 2In small bowl mix together, flour and baking. Set aside.
- 3In a large mixing bowl add olive oil, applesauce, honey and egg. Beat on medium speed about 2 minutes or until combined.
- 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
- 5Stir in blueberries
- 6Fill each cupcake liner with 1 tablespoon of pupcake mix.
- 7Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- 8Spread or pipe coconut cream frosting onto the pupcakes.
- 9Add a blueberry for garnish (optional)
For Coconut Cream Frosting
- 1Refrigerate coconut cream over night to allow it to get hard.
- 2In large mixing bowl beat coconut cream for 45 to 60 seconds until it is light and fluffy.
- 3Spread or pipe coconut cream frosting onto the pupcakes.
- 4Add a blueberry for garnish (optional)
