Today is all about brownies. So, we’re taking a quick break from mini pupcakes and sharing a little pup-brownie love.
These carob peppermint brownies are perfect for your doggie holiday soirée. And, of course they’ll make you the most popular dog there. Ok, maybe not the most popular, but you’ll definitely get a ton of compliments.

Ingredients
For Carob Peppermint Brownies
- ½ Cup Brown Rice Flour
- 1 Teaspoon Baking Powder
- 2 Tablespoons Carob Powder
- 1 Teaspoon Pure Peppermint Leaves
- ⅓ Cup of Carob Chips
- 3 Tablespoons Olive Oil
- 1 Egg
Instructions
Yields: 8 – 10 Mini Brownies
For Carob Brownies
- Preheat oven to 350° Line 8 – 10 1.75” inch mini-muffin pan with paper baking cups and set aside.
- In small bowl mix together flour, baking powder, carob powder, and peppermint leaves. Set aside.
- In a small bowl, heat carob chips and olive oil in microwave in 30-second increments for 3 to 5 minutes until melted.
- In large mixing bowl, mix together melted carob chips and egg. Beat on medium speed for about 2 minutes until combined.
- Add dry ingredients into the mixture and blend for approximately 2 minutes until well-mixed.
- Fill a 1.75” inch mini-muffin pan cups with 1 tablespoon of brownie mix and bake for 12-15 minutes. Brownies are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
