Sugar Introduces Her New Pupcakes At Bingo Night

It’s all about “crazy ideas” and taking the first steps toward living out our dreams at Pupcake Sugar Bingo Night.  Not to mention, these Banana French Toast Pupcakes.

Inspired by French Toast Bites Sugar got to sample during her Woof Art Bike Tour a few weeks ago, these pupcakes were the perfect addition during a night of celebration.  If you missed Pupcake Sugar Bingo night, no worries.  Here’s your chance to try out the recipe for you and your favorite pups at home.

Yields

  • 12 – 15 Mini Pupcakes

Ingredients

Banana Bread

  • 1 Ripe Banana
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Baking Powder
  • 1 Egg
  • 1/2 Cup Whole Wheat Flour

Banana French Toast Pupcakes

  • 2 Cups Cubed Banana Bread
  • 1/2 Cup Plain Yogurt
  • 1/4 Teaspoon Ground Cinnamon
  • 2 Teaspoons Pure Maple Syrup
  • 1 Egg

Maple Cinnamon Icing

  • 1/2 Cup Plain Yogurt
  • 1/4 Teaspoon Ground Cinnamon
  • 1 Tablespoon Pure Maple Syrup

Instructions

Banana Bread

  • 1Preheat oven to 350° F.
  • 2In a large mixing bowl, mash ripe banana and add olive oil. Mix together for approximately 1 minute until smooth.
  • 3Add in baking powder. Mix together for approximately 1 minute.
  • 4Add eggs. Mix together for approximately 1 minute.
  • 5Add flour. Mix together for approximately 1 minute.
  • 6Add mixture to 2 mini loaf pan cavities in a 3.8 x 2.5 inch mini loaf pan. I used the Wilton Cavity Mini Loaf Pan.
  • 7Bake for 22 – 25 minutes. Mini loaf bread pupcakes are done when you can stick a toothpick into the bread, and it comes out clean. Remove from pan and cool on wire rack.
  • 8Slice each loaf. You should be able to get 8 to 10 slices per loaf. Once sliced, cut each slice into 1-inch cubes. Set aside.

Banana French Toast Pupcakes

  • 1Preheat oven to 350° F. Line 12 – 15 1.75-inch mini muffin pan with paper bake cups and set aside.
  • 2In a large mixing bowl, mix yogurt, cinnamon, maple syrup, and egg. Beat on medium speed about 2 minutes or until combined.
  • 3Add cubed banana bread into the mixture and stir until well mixed.
  • 4Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 5Bake pupcakes for 15 – 18 minutes. Pupcakes are done when you can remove toothpick into the cake and it comes out clean. Remove from pan and let cool on a wire rack.
  • 6Pipe or drizzle maple cinnamon icing onto pupcakes (optional).

For Maple Cinnamon Icing (Optional)

  • 1In small mixing bowl beat yogurt, cinnamon, and maple syrup together on medium speed.
  • 2Pipe or drizzle maple cinnamon icing onto pupcakes.
