Yesterday was my first day back to reality after a much-needed holiday vacation.

After 10 days of sleeping in late, impromptu trips to the dog spa and some quality holiday partying with my family, I’m back to my regularly scheduled pup routine.  However, I don’t mind at all.  I walked into the new year refreshed and ready to achieve my goal.

Yes.  Dogs have goals too.  I try to set at least two to three goals for myself at the beginning of each year.  However, somewhere around March my insecurities start playing tricks on me if I’m not achieving as quickly as I thought I should.  Unfortunately, that can make me feel discouraged and talk myself out of continuing with my goal all together.   

Such is life of a pup-perfectionist.  Those insecurities will always be there, but it’s up to me to not let them get in the way.  And you know what they say “if you want different results, you have to take a different approach.”

So, this year I decided to shake things up a little bit and take a new approach while working towards my goals. 

It all started one morning as I walked past Mom’s bedroom mirror.  I stopped, stared and kept walking.  Then I backed up to stare at myself again.

You ever caught a glimpse at yourself in the mirror and just had to look at how fly you were.  Well, that’s how I felt that day, confident.  Then out of nowhere, I started barking to myself.  “You’re amazing,” I barked.  “You’re fly,” I barked again.  I even started quoting Snoop Dogg…

I wanna thank me. I wanna thank me for believing in me.

In my head I started thinking, “Where did that come from?”  My confidence seemed off the charts.  And somehow, barking these words made me feel like my day was going to be great before it even got started.

Of course, Mom thought it was funny.  Most humans don’t realize that dogs bark at their own reflection to hype ourselves up and tell ourselves how amazing we truly are.  But, still feel free to record us and post the video.  We pups don’t mind going viral for our 15 minutes of insta-fame too.  However, this moment in the mirror was all about me, despite how cute Mom thought it was. 

I decided that from this day forward I’m adding daily mirror “bark-firmations” to my morning routine.  Because, if I don’t tell myself how amazing I am, then how can I expect the world to.  How can I expect other pups (or humans) to believe in me, if I don’t believe in myself?

  • 12 Mini Pupcakes

Ingredients

Triple Berry Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Olive Oil
  • 1/3 Cup Plain Yogurt
  • 1 Egg
  • 1/4 Cup Blueberries
  • 1/4 Cup Diced Strawberries
  • 1/4 Cup Diced Blackberries

Coconut Cream Frosting

  • 1/2 Cup Coconut Cream

Instructions

For Triple Berry Pupcakes

  • 1Preheat oven to 350° F. Line 12 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour and baking powder. Set aside.
  • 3In a large mixing bowl add olive oil, yogurt and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Stir in blueberries, strawberries and blackberries.
  • 6Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 7Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  • 8Spread or pipe coconut cream frosting onto the pupcakes.
  • 9Add berries on each pupcake for garnish (optional)

For Coconut Cream Frosting

  • 1Refrigerate coconut cream over night to allow it to get hard.
  • 2In large mixing bowl beat coconut cream for 45 to 60 seconds until it is light and fluffy.
  • 3Spread or pipe coconut cream frosting onto pupcakes.
  • 4Add berries on each pupcake for garnish (optional)

    • I keep these (and all) the pupcakes I bake in the freezer so they last longer. I’ve kept these pupcakes in the freezer for 2 months and didn’t have a problem. I wrap the pupcakes in wax paper in groups of 3 or 4. Then I put the wrapped pupcakes into a freezer bag to store them flat in the freezer.

  • Followed straight with the steps listed above. The consistency didn’t look right to me already before I pop them into the oven. That’s why I had a six sense that these were not gonna work. And yes, they were just cooked crumbles. They were nothing like cupcakes. And now i looked back, doesn’t it need water?

    • Thank you for trying the recipe. I’m sorry that the pupcakes didn’t turn out. The recipe has both egg and yogurt in it. So, water wasn’t added the batter to keep it from being too runny. What was the consistency before you put them in the oven? Did you try dicing the berries prior to adding them to the recipe? Since these are mini pupcakes you may have to dice the berries smaller as opposed to standard sized pupcakes.
