Sugar Finds The Courage To Dream Big While Indulging In These Banana Pupcakes

This year, I finally had the courage to set a goal.  And, not just any goal.  A goal that completely scares me.  A goal that’s so colossal, I’ll even impress myself if I actually achieve it.  My goal this year…

I want to start my own business.

You read that right.  This pup wants her own business.  One where I can be my own boss, make my own rules and let my creativity shine through.  However, there’s one little problem that’s has been preventing me from getting started.

I have no clue what kind of business I want to start.

There’s gotta be something that other pups need that I can offer.  But, the question is “what?”  And, the even bigger question is “how do I even begin to get started figuring it out?”  Either way I made the goal, so I’m sticking to it.

In the past, moments like this have distracted me from believing that my goals were achievable.  And, it’s often caused me to lose motivation and never move forward.  However, this year is different.  I definitely don’t want my goal to fizzle out into a pile of forgotten New Year’s Resolutions.  You know?  The ones so lofty and scary that pups (and even humans) give up on them by mid-February.

So, instead of obsessing over not knowing what kind of business I want to start, I decided to focus on ways to stay motivated as I navigate through the journey to find the answer.  I thought to myself, “what has kept you motivated in other situations?”

The answer was simple.  Stories.  I love having stories to tell.  And, who doesn’t love to share their stories on social media?  So, creating stories through new experiences became my motivation.  Right then and there it took that pressure off of such a monumental goal.  Each story represents a major triumph in my business journey.  And even Doctor Who agrees…

And since, I still had no clue what business I wanted to start, I figured I needed to find a hobby that helps me relax.  Pup business owners are extremely busy, so I better have an outlet to help me relax, get out my frustrations and channel my creativity.  It also makes a great first story in the journey. 

After a few trial and errors, I decided baking would be a good fit for me.  I could zone out; time flies by and the outcome is always something delicious.

While baking one day, I got a huge idea.  Why don’t I create a new pupcake recipe for each story in my journey?  Each pupcake becomes a symbol for a new experience I had, a new lesson I’ve learned and even a new triumph I’ve achieved.  It also keeps me motivated and the recipe book can become a part of the legacy I pass down to my kids someday.

Now with my motivation in place, I’m ready to start my journey to pup business owner, one story and one pupcake at a time.

  • 8 - 10 Mini Pupcakes

Ingredients

Banana Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Olive Oil
  • 1 Mashed Banana
  • 1 Egg

Carob Peanut Butter Cream Frosting

  • 1/4 Cup Carob Powder
  • 2 Tablespoons Plain Yogurt
  • 2 Tablespoons Creamy Peanut Butter (unsalted with no added sugars)

Instructions

For Banana Pupcakes

  • 1Preheat oven to 350° F. Line 8 – 10 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour and baking powder. Set aside.
  • 3In a large mixing bowl add olive oil, banana and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 6Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  • 7Spread or pipe carob peanut butter cream frosting onto the pupcakes.

For Carob Peanut Butter Cream Frosting

  • 1In large mixing bowl beat carob powder, yogurt and peanut butter together on medium speed. Mix until creamy.
  • 2Spread or pipe carob peanut butter cream frosting onto the pupcakes.
