Snoopy and I sure do have one thing in common.
We both love to dance.
I can’t say that I’m a great dancer, but all I have to do is follow Mom’s feet. She loves to dance too. It’s never a surprise to find her dancing around in her orange socks with her hair whipping back and forth. So, of course I just join in all the fun. When her feet slide to the right, I slide with them. When her feet hop to the left, so do I. Whether I’m on beat or not, there’s only one dancing rule…
“Darling, don’t be afraid to dance your heart out!”
As soon as Mom turns up the music, it’s on. Sometimes she gets so into it that she picks me up and swings me around. I’d rather hop around on the floor like Snoopy does, but I guess I can handle a bit of swinging action for a few seconds. Especially, if there’s pupcakes afterwards.
These Girl Scout cookie inspired Do-Si-Do Pupcakes, pun intended, are perfect after a little music and a whole lot of dancing with Mom and her colorful socks.

Ingredients
Do-Si-Do Pupcakes
- ½ Cup Whole Wheat Flour
- 1 Teaspoon Baking Powder
- ¼ Cup Olive Oil
- ¼ Cup Creamy Peanut Butter (unsalted with no added sugars)
- ⅓ Cup Plain Yogurt
- 1 Egg
Whipped Peanut Butter Frosting
- ¼ Cup Creamy Peanut Butter (unsalted with no added sugars)
- 3 Tablespoons Plain Yogurt
Instructions
Yields: 16 – 18 Mini Pupcakes
For Do-Si-Do Pupcakes
- Preheat oven to 350° Line 16–18 1.75” inch mini-muffin pan with paper bake cups and set aside.
- In small bowl mix together flour and baking powder. Set aside.
- In a large mixing bowl add olive oil, peanut butter, yogurt, and egg. Beat on medium speed about 2 minutes or until combined.
- Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
- Fill each cupcake liner with 1 tablespoon of pupcake mix and bake for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- Spread or pipe whipped peanut butter frosting onto the pupcakes.
For Whipped Peanut Butter Frosting
- In large mixing bowl beat, yogurt and peanut butter together on medium speed. Mix until creamy. Frosting should have the consistency of whipped cream.
- Spread or pipe whipped peanut butter frosting onto the pupcakes.
