My goal this year is to grow and diversify my pupcake portfolio.

I look at pupcakes as my biggest asset.  They are major currency and are extremely important to growing my wealth.  So, growing my portfolio into a flourishing stack of pupcakes has been my biggest goal this year.

However, there are still a few issues that I have with getting my pupcake portfolio to where I want it to be.

I can’t operate the mixer.  And even if I could, Mom certainly wouldn’t let me.  Mixers were definitely not made for these little paws to handle.  I’m way too small to even reach the counter.  In fact, Mom barely lets me in the kitchen.  And, let’s not forget about what recipes I should choose.  There are so many options, it’s hard for me to even know where to start with choosing the right ones for me.

Oops!  There I go complaining again.

Please forgive me.  No one, and I do me no one, likes to be around complainers.  They’re extreme positivity suckers and have even been known to completely clear a room.

Since I’m not a fan of complainers, I try my hardest not to complain either.  It’s like Ajahn Brahm stated…

The worst part about complaining is that it’s probably one, if not, the biggest distraction you or I will ever have.  Complaining completely disrupts focus.  It also makes time move slower and causes tasks to take longer to complete.  Complaining may also discourage us from even trying to taking the first step towards that goal.

So instead of complaining about all of the “am not’s,” “too muches,” “less thans,” etc. focus on building a plan.

Plans are the best way to avoid getting distracted and maintaining focus.  They keep you solutions driven.  And, plans even have the power to change.  That’s what’s so great about them.  Therefore, if things aren’t working you can just make a few adjustments.  At the end of the day, goals often require a Plan B, Plan C, and maybe even Plan D.  Why do you think GPS’ have a re-routing capability?

If you want to add a little more flair to your plan, incorporate your values into your plans.  It’ll make you feel like you have a little more control in reaching your goals.

Now, back to my pupcake portfolio.  My plan became a simple one.  I asked Mom to become my Pupcake Advisor.  Not only can she actually operate the mixer, but she can also advise on the best pupcakes to help me diversify my portfolio and grow my wealth.

That’s something I can definitely get with.  NO COMPLAINTS.  And, my pupcake portfolio is growing stronger each week.

Ingredients

Pumpkin Applesauce Pupcakes

• ½ Cup Whole Wheat Flour
• 1 Teaspoon Baking Powder
• 2 Tablespoons Olive Oil
• ⅓ Cup Pumpkin Puree
• ⅓ Cup Unsweetened Applesauce
• 1 Tablespoon Pure Honey
• 1 Egg

Honey Glazed Icing

• ¼ Cup Plain Yogurt
• 1 Tablespoon Pure Honey

Instructions

Yields: 14 – 16 Mini Pupcakes

For Pumpkin Applesauce Pupcakes

1. Preheat oven to 350° F.  Line 14 – 16 1.75-inch mini-muffin pan with paper bake cups and set aside.
2. In small bowl mix together flour and baking powder. Set aside.
3. In a large mixing bowl add olive oil, pumpkin puree, applesauce, honey and egg. Beat on medium speed about 2 minutes or until combined.
4. Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
5. Fill each cupcake liner with 1 tablespoon of pupcake mix.
6. Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean.  Remove from pan and cool on wire rack.

 For Honey Glazed Icing

1. In small mixing bowl beat yogurt and honey together on medium speed.
2. Pipe, drizzle, or spread honey glazed icing onto the pupcakes.
