Apple Cider New Year’s Eve Pupcakes

Ingredients

For Apple Cider Pupcakes

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Ground Ginger
  • 1 Teaspoon Ground Cinnamon
  • 1 Tablespoon Olive Oil
  • ⅓ Cup Apple Sauce
  • 1 Teaspoon Apple Cider Vinegar
  • 1 Egg

For Pupcake Frosting

  • ¼ Cup Cream Cheese
  • ⅓ Cup Plain Yogurt
  • ½ Cup Brown Rice Flour
  • A sprinkle of food coloring (I used Powdered Dog Safe Food Coloring from K9 Cakery)

Instructions

Yields: 12 Mini Pupcakes

For Apple Cider Pupcake

  1. Preheat oven to 350° Line 12 1.75” inch mini-muffin pan with paper baking cups and set aside.
  2. In small bowl mix together flour, baking powder, ginger, and cinnamon. Set aside.
  3. In a large mixing bowl add olive oil, applesauce, apple cider vinegar, and egg. Beat on medium speed for about 1 minute until combined.
  4. Add dry ingredients into the mixture and blend for about 2 minutes until mixed.
  5. Fill each cupcake liner with 1 tablespoon of cupcake mix and bake for 12 minutes. Cupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  6. Spread or pipe cream cheese frosting on the pupcake.

 For Pupcake Frosting

  1. In large mixing bowl beat cream cheese and yogurt together on medium speed. Mix until smooth.
  2. Gradually add in flour and food coloring (optional). Beat on high until creamy. Frosting should have the consistency of whipped cream.
