Apple Oatmeal Pupcakes With Peanut Butter Frosting

We just have to know when to tap into it. Resilience is the spirit inside that tells us to keep going, no matter how many times we’re knocked down. It’s about strength and flexibility. It’s learning how to work on the solution instead of harboring on the mistakes. Resilience is having plan A, but knowing somewhere along the line you might have to use plan B.

In business, resilience is about being proactive. Why? Because things are constantly changing, and in order to move to the next level in your business you have to be able to adapt. So, “cultivate resilience” as Brené Brown says. Take the time to map out a plan B or C if you have to. It helps that road to success become a little smoother. It’s also important to stay focused on the big picture. Therefore, when it becomes time to revert to plan B or C, you’ll still be working towards the same goal.

For instance, one of the ways we stay proactive with Pupcake Sugar is developing an editorial calendar. Not because we’re extremely organized, but because we’ve had several instances where our recipes didn’t turn out quite right. Using the editorial calendar actually allows us to bake ahead of time. This way if a recipe flops, we can simply move recipes around so we can get our blog posts out on time.

Ingredients

For Apple Oatmeal Pupcakes

  • ½ Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • ½ Cup Quaker Oats
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon 100% Pure Maple Syrup
  • ⅓ Cup Unsweetened Apple Sauce
  • 1 Egg

Peanut Butter Frosting

  • ¼ Cup Creamy Peanut Butter (unsalted with no added sugars)
  • 3 Tablespoons Plain Yogurt

Instructions

Yields: 12 – 16 Mini Pupcakes

For Apple Oatmeal Pupcakes

  1. Preheat oven to 350° Line 12 – 16 1.75-inch mini-muffin pan with paper bake cups and set aside.
  2. In small bowl mix together flour, baking powder, dried Quaker oats. Set aside.
  3. In a large mixing bowl add olive oil, maple syrup, applesauce, and egg. Beat on medium speed about 2 minutes or until combined.
  4. Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  5. Fill each cupcake liner with 1 tablespoon of pupcake mix.
  6. Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  7. Spread or pipe peanut butter frosting onto the pupcakes.

For Peanut Butter Frosting

  1. In large mixing bowl beat peanut butter and yogurt together on medium speed. Mix until creamy. Frosting should have the consistency of whipped cream.
  2. Spread or pipe peanut butter frosting onto the pupcakes.
