How to Bake Mac & Cheese Pupcakes for Friendsgiving

When it comes to Mac & Cheese, there’s one rule that will never change.  Don’t mess it up.

So, I was extremely nervous the first time I made the Mac & Cheese for “B. F. Friendsgiving” (Best Fur Friendsgiving) a few years ago.  I swear I practiced (yes, practiced) making it at least three or four times before I made the grand finale dish for our B. F. Friendsgiving.  Trust me.  I was not going to be embarrassed and have pups turning up their noses at my Mac & Cheese.

Thank goodness for practice runs.  My Mac & Cheese became the B. F. Friendsgiving favorite dish and the inspiration behind my Mac & Cheese Pupcakes, which made their debut at Pupcakes & Tea a few years ago.

Ingredients

Mac & Cheese Pupcakes

  • 1/2 Cup Uncooked Elbow Macaroni
  • 1 Cup Cubed Cheddar Cheese
  • 2 Tablespoons Olive Oil
  • 1 Piece of Bread of Your Choice (I used Rye)
  • 1 Teaspoon Parsley
  • 1 Egg

Mac & Cheese Frosting (Optional)

  • 1 Cup Pureed White Sweet Potato (1 Large White Sweet Potato)
  • 1 Teaspoon Cubed Cheddar Cheese

Instructions

For Mac & Cheese Pupcakes

  • 1Preheat oven to 350° F. Line 8 – 10 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2Bring a 1-quart pot of water to a rolling boil. Once boiled, add elbow macaroni and cook for 8 minutes. Drain cooked elbow macaroni and return to pot. Set aside 2 tablespoons of water from the pot.
  • 3In small pot mix 2 tablespoons of water and 1 cup cubed cheese on medium low heat until cheese is melted into a sauce.
  • 4Toast piece of bread in the toaster until brown. Once browned, grind up bread into crumbs. Mix bread crumbs, olive oil, and parsley in a small bowl. Set aside.
  • 5In small bowl stir, cooked elbow macaroni, 1 tablespoon olive oil, and cheese sauce. Stir until mixed.
  • 6Fill each cupcake liner with 1 tablespoon of mixture.
  • 7Sprinkle bread crumb mixture on the top of each pupcake.
  • 8Bake pupcakes for 10 – 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. The top of the pupcake should also be firm. If pupcakes aren’t done after 10 – 12 minutes, let them bake for another 2 – 3 minutes. Remove from pan and cool on wire rack.
  • 9Pipe or spread mac & cheese frosting on each pupcake (optional).

For Mac & Cheese Frosting (Optional)

  • 1Pour approximately 1-inch of water into a pot fitted for a steamer. Place the steamer on the pot and then place the white sweet potato into the steamer.
  • 2Turn the burner on medium heat. Let the white sweet potato steam for 25 – 35 minutes. The white sweet potato is done when you can stick a fork completely through the potato.
  • 3Remove potato from the steamer and peel the skin immediately. The white sweet potato will still be hot. Make sure to use a knife and fork to peel it.
  • 4Cut the white sweet potato into 1-inch cubes. Place in the blender. Add 4 tablespoons of the water from the pot to enhance the flavor and 1 teaspoon cubed cheddar cheese.
  • 5Blend the ingredients until creamy.
  • 6Remove mixture from the blender and place in a sealed container.
  • 7Refrigerate the mixture overnight.
  • 8Pipe or spread mac & cheese frosting on each pupcake.
