The summer called and it said, “Send Sugar Water Salad Pupcakes.”

So, I had no chance but to answer.  Inspired by my trip to New Howleans and one of my favorite summer fruits, these Sugar Water Salad Pupcakes were the perfect addition to “The Let Out,” Pupcake Sugar’s official jammy jam.

This simple summer sweetness in a pupcake was the perfect way to celebrate the official opening of the outside.  Especially when you include the Wobble and a few hula hoops.

However, if you missed “The Let Out,” no worries.  You can make your own Sugar Water Salad Pupcakes right at home.  So, the next time you and your BFFs get together to enjoy that glorious vitamin D action, take a few of these Sugar Water Salad Pupcakes with you.

  • 10 – 12 Mini Pupcakes

Ingredients

Sugar Water Salad Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 1/2 Cup Quaker Oats
  • 1/4 Teaspoon Pure Mint
  • 1 Tablespoon Olive Oil
  • 1/3 Cup Unsweetened Applesauce
  • 1/4 Cup Cubed Watermelon
  • 1/4 Cup Chopped Spinach
  • 1 Egg

Honey Glazed Icing (Optional)

  • 1/4 Cup Plain Yogurt
  • 1 Tablespoon Pure Honey

Instructions

For Sugar Water Salad Pupcakes

  • 1Preheat oven to 350° F. Line 10 – 12 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour, baking powder, oats, and mint. Set aside.
  • 3In a large mixing bowl add olive oil, applesauce, cubed watermelon, chopped spinach, and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 6Bake pupcakes for 12 – 15 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  • 7Pipe, drizzle, or spread honey glazed icing onto each pupcake (optional).

For Honey Glazed Icing (Optional)

  • 1In small mixing bowl beat yogurt and honey together on medium speed.
  • 2Pipe, drizzle, or spread honey glazed icing onto the pupcakes.
