This month’s pupcake recipe is all about mixing it up.  I love chocolate, and I never go a day without it.  However, chocolate is toxic for dogs, which means I keep Sugar far away from it.  But carob is a chocolate loving dog mom’s dream.  I can remix some of my favorite chocolate recipes into a dog-friendly dessert for Sugar.  So, allow me to introduce you to one of them; Carob Raspberry Pupcakes.

WHY WE LOVE THESE PUPCAKES

It’s the carob for me (and Sugar).  The carob gives Sugar a chance to indulge in the chocolate experience without the actual chocolate.  It also has a sweet aroma, which makes it perfect for the holiday season.  The raspberries add a nice twist because they add a vibrant pop of color to your dog’s holiday treat.

WHEN TO BAKE THESE PUPCAKES

I’d love a good cup of hot cocoa during the holiday season.  Any other holiday hot cocoa sippers out there?  These Carob Raspberry Pupcakes are a cute alternative for your dog to snack on while you sip on your hot cocoa.  The raspberries give a nice holiday red pop of color to match those holiday pajamas you’re lounging around in.

Ingredients

Carob Raspberry Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Carob Powder
  • 2 Tablespoons Olive Oil
  • 1/4 Cup Plain Yogurt
  • 1 Tablespoon Water
  • 1/4 Cup Diced Raspberries
  • 1 Egg

Carob “Buttercream” Frosting

  • 1/2 Cup Creamy Peanut Butter (Unsalted with no added sugars)
  • 6 Tablespoons Plain Yogurt
  • 3 Tablespoons Carob Powder
  • 16 to 20 Raspberries for Garnish (Optional)

Instructions

For Carob Raspberry Pupcakes

  • 1Preheat oven to 350° F. Line 8 – 10 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour, baking powder, and carob powder. Set aside.
  • 3In a large mixing bowl add olive oil, yogurt, water, diced raspberries, and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 6Bake pupcakes for 13 – 15 minutes. Pupcakes are done when you can stick a toothpick into the cake, and it comes out clean. The top of the pupcake should also be firm. If pupcakes aren’t done after 13 – 15 minutes, let them bake for another 2 – 3 minutes. Remove from pan and cool on wire rack.
  • 7Pipe or spread carob “buttercream” frosting on each pupcake.
  • 8Add 2 raspberries to each pupcake for garnish (optional).

For Carob “Buttercream” Frosting

  • 1In a large mixing bowl beat carob powder, yogurt, and peanut butter together on medium speed. Mix until creamy.
  • 2Pipe or spread carob “buttercream” frosting on each pupcake.
  • 3Add 2 raspberries to each pupcake for garnish (optional).
