A few years ago, I was looking for a fresh start. I’d been laid off from my job and needed a change of scenery. Well, I got the fresh start I was looking for, but it looked nothing like I thought it would. However, it turned into everything I needed.
My fresh start led me to rediscovering my talent and opened the door to opportunities I didn’t know existed. So, this month’s Spring Chill Pupcakes are dedicated to fresh starts and brining on new beginnings.
ABOUT THE SPRING CHILL PUPCAKE INGREDIENTS
The star ingredients for these Spring Chill Pupcakes are cucumber, mint, and oatmeal. Cucumbers are hydrating and are 96% water, which make them a great snack for your dog on a hot day. They are also low in calories and contain vitamin C and K along with potassium and magnesium. Mint can aid in your dog’s breath and, in moderation, can have a soothing effect on your dog’s stomach. Oatmeal is a great source of fiber, which can also aid in your dog’s digestion.
WHEN TO BAKE THESES SPRING CHILL PUPCAKES
Ever hear of a scent walk? PetMD defines a “scent walk” as a walk with your dog that changes the focus from miles covered to odors logged. It gives your dog a chance to lead the walk by following his or her nose, literally. Mint is one of the main ingredients for these Spring Chill Pupcakes, which makes it a great treat to let your dog sniff out and find. So, whether you hide the pupcake in your house or in a puzzle, it’s a great pupcake to use to give your dog a chance to follow his or her nose. And, since It’s Spring, you can even use these Spring Chill Pupcakes to set up an Easter Egg Hunt for your dog. Hide the pupcake in an Easter egg, and let your dog have fun finding it.

- 8 – 10 Mini Pupcakes
Ingredients
Spring Chill Pupcakes
- 1/2 Cup Whole Wheat Flour
- 1 Teaspoon Baking Powder
- 1/2 Teaspoon Pure Mint
- 1/4 Cup Quaker Oats
- 1 Tablespoon Olive Oil
- 1/3 Cup Unsweetened Apple Sauce
- 1/4 Cup Chopped Cucumber
Peanut “Buttercream” Frosting
- 1/2 Cup Creamy Peanut Butter (Unsalted with no added sugars)
- 1/4 Cup Plain Yogurt
- 8-10 Cucumber Slices for Garnish (Optional)
- 8-10 Small Peppermint Leaves for Garnish (Optional)
Instructions
For Sprig Chill Pupcakes
- 1Preheat oven to 350° F. Line 8 – 10 1.75-inch mini-muffin pan with paper bake cups and set aside.
- 2In small bowl mix together, flour, baking powder, mint, and Quaker Oats. Set aside.
- 3In a large mixing bowl add olive oil, applesauce, cucumber, and egg. Beat on medium speed about 2 minutes or until combined.
- 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
- 5Fill each cupcake liner with 1 tablespoon of pupcake mix.
- 6Bake pupcakes for 13 – 15 minutes. Pupcakes are done when you can stick a toothpick into the cake, and it comes out clean. The top of the pupcake should also be firm. If pupcakes aren’t done after 13 – 15 minutes, let them bake for another 2 – 3 minutes. Remove from pan and cool on wire rack.
- 7Pipe or spread peanut “buttercream” frosting on each pupcake.
- 8Add 1 cucumber slice to each pupcake for garnish (optional).
- 9Add 1 small peppermint leaf to each pupcake for garnish (optional).
For Peanut “Buttercream” Frosting
- 1In a large mixing bowl beat yogurt and peanut butter together on medium speed. Mix until creamy.
- 2Pipe or spread peanut “buttercream” frosting on each pupcake.
- 3Add 1 cucumber slice to each pupcake for garnish (optional).
- 4Add 1 small peppermint leaf to each pupcake for garnish (optional).
