This month is all about investing. Investing our time, energy, and our money.  As a dog mom, investing means setting aside time and money to take care of you and your fur baby’s well-being.  The beauty is we can start investing my using what we have right in front of us, like using a few leftovers is your fridge.  Which brings me to this month’s pupcake recipe.

ABOUT THE VEGETABLE MEDLEY PUPCAKES

These Vegetable Medley Pupcakes include a mixed blend of applesauce, broccoli, zucchini, and carrots.  According to the American Kennel Club, carrots are an excellent source of vitamin A, potassium, and fiber for your dog.  Raw and cooked carrots are a healthy add to your dog’s diet.  Broccoli is high in fiber and vitamin C as well as low in fat.  They make a great treat, however, should be given in small quantities to avoid gastric irritation.  Zucchini is a green squash that contains lots of nutrients and provides a lot of fiber, vitamins, and minerals.  Apples are not just a sweet treat, but they are also a great source of vitamin C, vitamin A, potassium, and antioxidants.

WHEN TO BAKE THESE VEGETABLE MEDLEY PUPCAKES

This pupcake recipe was created with some extra produce I had in my refrigerator.  I’ve been known to unintentionally let produce go bad because I forget that they’re in the bin.  So, these pupcakes are great for any dog mom looking to clean out the fridge.  There also a fun treat for those dogs who aren’t crazy about eating their vegetables (Sugar hates raw carrots).  So, these Vegetable Medley Pupcakes are a great way to add a few light veggies to an afternoon snack menu.  You can also freeze your pupcakes to help them last longer.  In our blog post, How to Freeze Your Pupcakes, we’re sharing quick tips on how to freeze and store your pupcakes.

“Ingredients are an investment.”  Everything we purchase in an investment.  It’s up to us to think through what we’re really investing in.  Think of your purchases as ingredients.  Each ingredient is investing something into your future.  These pupcakes, for instance, are an investment in my dog’s health and well-being.  They’re also an investment in my creativity as I chose to repurpose my leftovers and turn them into something amazing.  Plus, it’s an investment in my pocket and a lesson to be more intentional in my food purchases.
