Ingredients

Dog-Friendly Nutella

  • 1 Cup Creamy Peanut Butter (unsalted with no added sugars)
  • ¼ Cup Carob Chips
  • 2 Tablespoon Carob Powder

Nutella Inspired Pupcakes

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Carob Powder
  • 1 Tablespoon Olive Oil
  • ¼ Cup Coconut Milk
  • ¼ Cup Dog Friendly Nutella (See Ingredients Above)
  • 1 Egg

Peanut Butter Mousse

  • ½ Cup Coconut Cream
  • 2 Tablespoons Creamy Peanut Butter (unsalted with no added sugars)
  • 1 Tablespoons 100% Pure Maple Syrup

Instructions

Yields: 12 – 14 Mini Pupcakes

For Dog-Friendly Nutella

  1. In a small bowl, heat carob chips and olive oil in microwave in 30-second increments for 1 to 2 minutes until completely melted.
  2. In a large mixing bowl, add melted carob chips, peanut butter, and carob powder. Mix until all ingredients are combined.
  3. Set aside ¼ cup of mixture and refrigerate remaining Nutella in a container or jar until ready to serve.

For Nutella Inspired Pupcakes

  1. Preheat oven to 350° Line 1.75-inch mini-muffin pan with paper baking cups and set aside.
  2. In small bowl mix together flour, baking powder, and carob powder. Set aside.
  3. In a large mixing bowl add olive oil, coconut milk, dog friendly Nutella, and egg. Beat on medium speed until combined.
  4. Add dry ingredients into the mixture and blend until mixed.
  5. Fill each cupcake liner with 1 tablespoon of pupcake mix and bake for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  6. Cut a hole in the middle of the pupcake and add refrigerated dog-friendly Nutella into the middle of the pupcake (optional).
  7. Spread or pipe peanut butter mousse on the pupcake.

For Peanut Butter Mousse

  1. Refrigerate coconut cream over night to allow it to get hard.
  2. In large mixing bowl beat coconut cream for 45 to 60 seconds until it is light and fluffy.
  3. Add peanut butter and maple syrup. Blend for approximately 1 minute until all ingredients are combined.
  4. Cut a hole in the middle of the pupcake and add refrigerated dog-friendly Nutella into the middle of the pupcake (optional).
  5. You can add mousse to pupcakes right away. Or, you can refrigerate approximately 3 to 4 hours to get a mousse consistency.

Notes

  • Keep pupcakes refrigerated until you’re ready to serve to your pup. The mousse on the pupcake will melt if it sits out too long.
  • This recipe is for a fun treat ONLY. It should not replace your dog’s regular meals. Please consult with your vet on the best plan for your dog’s diet.
