Red Velvet Pupcakes

The perfect pupcake to leave as a treat for Doggie Santa.

Christmas is only a few days away. And boy, do we have a divine pupcake for you. This year I asked Doggie Santa for a pair of slippers. When I sent Santa the letter, I also included a few of these little red velvet pupcakes.

Since Christmas is only a few days a way, I thought that I’d share this recipe with you. These red velvet pupcakes are the perfect addition to your doggie dessert tray. I even plan to leave a few out for Doggie Santa on Christmas Eve. Hopefully, it’ll do the trick because I really want those slippers.

Ingredients

For Red Velvet Pupcakes

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Beet Powder
  • ¼ Cup Olive Oil
  • ⅔ Cups Plain Yogurt
  • 1 Egg

For Cream Cheese Frosting

  • ¼ Cup Cream Cheese
  • ⅓ Cup Plain Yogurt
  • ½ Cup Brown Rice Flour

Instructions

Yields: 12 – 15 Mini Pupcakes

For Red Velvet Pupcake

  1. Preheat oven to 350° Line 12 – 15 1.75” inch mini-muffin pan with paper baking cups and set aside.
  2. In small bowl mix together flour, baking powder, beet powder. Set aside.
  3. In a large mixing bowl add olive oil, yogurt, and egg. Beat on medium speed for about 1 minute until combined.
  4. Add dry ingredients into the mixture and blend for about 2 minutes until mixed.
  5. Fill each cupcake liner with 1 tablespoon of cupcake mix and bake for 12 minutes. Cupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  6. Spread or pipe cream cheese frosting onto the pupcakes.

For Cream Cheese Frosting

  1. In large mixing bowl beat cream cheese and yogurt together on medium speed. Mix until smooth.
  2. Gradually add in flour. Beat on high until creamy. Frosting should have the consistency of whipped cream.
