Laundry day is a chill day in our house. The day usually revolves around sleeping in, a little baking, a quick nap, and the rhythmic sound of the washer and dryer.   There’s absolutely no question.

When I see Mom pull out that laundry basket, I know it’s going to be my kind of day.

My absolute favorite part of laundry day, besides the pupcakes, is when Mom does the sheets. Why? Because they’re so warm and cozy when she takes them out the dryer. As soon as I hear that dryer buzzer, my head perks up, and I immediately run to the dryer. Essentially…

Happiness is doing a belly flop and rolling around in a pile of warm sheets fresh from the dryer.

Have you ever tried it? Trust me. There’s nothing like it. Something about warm sheets makes me feel all cozy inside. We all need a place that just fits and makes us feel comfortable. Rolling around in warm sheets just makes my heart flutter. You know what else makes my heart glad?

Ingredients

Strawberry Pineapple Pupcakes

  • ½ Cup Coconut Flour
  • 1 Teaspoon Baking Powder
  • ¼ Cup Olive Oil
  • ⅓ Cup Plain Yogurt
  • 2 Tablespoons Pineapples
  • 2 Tablespoons Strawberries
  • 1 Egg

Coconut Cream Frosting

Instructions

Yields: 12 – 15 Mini Pupcakes

For Strawberry Pineapple Pupcakes

  1. Preheat oven to 350° Line 12 1.75” inch mini-muffin pan with paper bake cups and set aside.
  2. In the blender, purée pineapples and strawberries for approximately 1 minute. Set aside.
  3. In small bowl mix together flour and baking powder. Set aside.
  4. In a large mixing bowl add olive oil, yogurt, 2 tablespoons puréed pineapples and strawberries, and egg. Beat on medium speed about 2 minutes or until combined.
  5. Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  6. Fill each cupcake liner with 1 tablespoon of pupcake mix and bake for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  7. Spread or pipe coconut cream frosting onto the pupcakes.
  8. Add a piece of strawberry or pineapple for garnish (optional)

For Coconut Cream Frosting

  1. In large mixing bowl beat coconut cream, yogurt, and flour together on medium speed. Mix until creamy. Frosting should have the consistency of butter cream.
  2. Spread or pipe coconut cream frosting onto the pupcakes.
