I’ve lost my favorite pair of slippers.
Who am I kidding? I lost my only pair of slippers. I’ve had them for years and never expected to lose them at all. I’d always thought I’d be the one who’d get rid of them when I was ready. Not the other way around.
The moment I realized they were gone, I got worried. How was I going to stay warm? How were my little paws going to survive the winter? I had no clue and struggled to come up with a solution. The funny thing is that I told myself several times that I should work on finding a new pair. However, those thoughts were always fleeting and I stuck to the pair of slippers that I had.
Now, my only slippers were gone and I was forced to find another pair in a flooded slipper market. I was a little embarrassed. When I’d go out with my friends, I’d try to avoid the slipper conversation all together. And, if another pup started talking about her pair of slippers, I’d pray no one would ask me about mine.
I didn’t want to deal with the questions. “So, what are you going to do?” “What happened?” “How are you going to keep warm?” Truthfully, I didn’t have an answer. And at the moment, I still needed to process the loss.
I spent months looking for a new pair of slippers. Some of them were too big. Others were too small. One sales-pup even told me flat out that I wasn’t “the right fit for her slippers.” It’s definitely true what they say. It’s easier to find another pair of slippers when you already have a pair.
I also spent months making due with what I had, but became more and more discouraged with every rejection. Then I saw a quote by Bo Bennett while scrolling through my Pupsta-gram…
A rejection is nothing more than a necessary step in the pursuit of success.
I thought to myself, “maybe losing my slippers was a blessing in disguise.” As I thought a little harder, I realized that I was fed up with that pair of slippers anyway. Subconsciously, I knew it was time for a change like socks, or blankets or even a fashionable robe.
Losing those slippers was the push I absolutely needed. It forced me to take a deeper look at myself and find something that will make me happy. Now, while most pups are comfortable with their slippers, I’m living my best life in my new robe.
These Apple Spinach Oatmeal Muffin Pupcakes are dedicated to letting go of what we “should have” and focusing on going after what makes us happy.

- 10 - 12 Mini Pupcakes
Ingredients
Apple Spinach Oatmeal Muffin Pupcakes
- 1/2 Cup Whole Wheat Flour
- 1 Teaspoon Baking Powder
- 2 Tablespoons Olive Oil
- 1/3 Cup Unsweetened Applesauce
- 1 Tablespoon Pure Maple Syrup
- 1/4 Cup Chopped Spinach
- 1 Egg
Yogurt Frosting (Optional)
- 1/4 Cup Plain Yogurt
- 1/4 Cup Chopped Spinach
Instructions
For Apple Spinach Oatmeal Muffin Pupcakes
- 1Preheat oven to 350° F. Line 10 – 12 1.75-inch mini-muffin pan with paper bake cups and set aside.
- 2In small bowl mix together, flour, baking powder and oatmeal. Set aside.
- 3In a large mixing bowl add olive oil, applesauce, maple syrup, spinach and egg. Beat on medium speed about 2 minutes or until combined.
- 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
- 5Fill each cupcake liner with 1 tablespoon of pupcake mix.
- 6Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- 7Spread 1 teaspoon of yogurt frosting onto each pupcake (optional)
- 8Sprinkle chopped spinach on top of each pupcake for garnish (optional)
For Yogurt Frosting
- 1Scoop 1 teaspoon of yogurt frosting
- 2Spread 1 teaspoon of yogurt frosting onto each pupcake
- 3Sprinkle chopped spinach on top of each pupcake for garnish
