My weeks are often pretty busy.
Between projects at work and developing my own business venture, I have a lot of late nights and early mornings. And, let’s not forget that I need to have some sort of social life. There’s no way I could let life pass by without posting something on Pupsta-Gram.
My friends are the same way. Ambitious. Hardworking. Savvy. Extremely supportive. That’s why it’s great to have them as my core group. It’s always much easier to go after your goals, if you have a core group of pups that support you no matter what.
However, a pup is tired. And, based on my conversations with my girls, so are they. It got to the point that we all agreed that we need a break. So, we decided to have a girls day (and night) out.
Our girls’ day started with a little relaxation and pampering. We took a Doga class followed by manicures and pedicures at the spa as well as getting our hair done at the salon. And, of course no pampering would be complete without a massage.
The massages are great because it gives a chance to get a little me time for a few minutes. Spending the day relaxing with my friends is cool, but we all need a little me time to get into our own thoughts.
After pampering, we had a brief lunch at the Pup Bistro and went shopping for a new outfit. We were going to a concert later on that night.
As I roamed the stores looking for a new outfit to wear, I came across the perfect dress. It was the right color and fit my little pup body perfectly. It even showed off my flirty tail. I was all set to buy it until I saw the price tag.
The dress was nearly double what I was looking to spend. So, I thought for a moment. How often do I get to hang out like this? Is it really going to break the bank if you buy it? And most importantly, if you don’t buy it are you going to regret it later. And then the words of Sarah Jessica Parker started ringing in my ear…
Every once in a while, a girl has to indulge herself.
So, since the dress wasn’t going to put any real dent in my budget, I bought the dress. And, the purchase was definitely worth it.
As I pulled out my cell phone to take a selfie, I realized that this night was exactly what I needed. A break from my regular routine. A girls’ day (and night) out is always a great idea. I even got a break from my regular everyday clothes. That dress was perfect in every way possible. And, believe me. I worked it.
These Strawberry Carob Chip Pupcakes are dedicated to remembering to indulge ourselves from time to time.

- 8 - 10 Mini Pupcakes
Ingredients
Strawberry Carob Chip Pupcakes
- 1/2 Cup Whole Wheat Flour
- 1 Teaspoon Baking Powder
- 2 Tablespoons Olive Oil
- 1/3 Cup Plain Yogurt
- 1 Egg
- 1/4 Cup Diced Strawberries
- 1/4 Cup Carob Chips
Coconut Cream Frosting (Optional)
- 1/2 Cup Coconut Cream
Instructions
For Strawberry Carob Chip Pupcakes
- 1Preheat oven to 350° F. Line 8 – 10 1.75-inch mini-muffin pan with paper bake cups and set aside.
- 2In small bowl mix together, flour and baking powder. Set aside.
- 3In a large mixing bowl add olive oil, yogurt and egg. Beat on medium speed about 2 minutes or until combined.
- 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
- 5Stir in diced strawberries.
- 6Stir in carob chips.
- 7Fill each cupcake liner with 1 tablespoon of pupcake mix.
- 8Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- 9Spread or pipe coconut cream frosting onto the pupcakes (optional).
- 10Add strawberry on top of pupcake for garnish (optional).
For Coconut Cream Frosting (Optional)
- 1Refrigerate coconut cream over night to allow it to get hard.
- 2In large mixing bowl beat coconut cream for 45 to 60 seconds until it is light and fluffy.
- 3Spread or pipe coconut cream frosting onto the pupcakes.
- 4Add strawberry on top of pupcake for garnish (optional).
