Ingredients

For Pumpkin Carob Chip Bundt Cake Pupcakes

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Olive Oil
  • ⅓ Cup Pumpkin Purée
  • ⅓ Cup Plain Yogurt
  • 2 Tablespoons Carob Chips
  • 1 Egg

Instructions

Yields: 2 Mini Bundt Pupcakes

 For Pumpkin Carob Chip Bundt Cake Pupcakes

  1. Preheat oven to 350° F.
  2. In small bowl mix together flour and baking powder. Set aside.
  3. In a large mixing bowl add olive oil, pumpkin purée, yogurt, and egg. Beat on medium speed until combined.
  4. Add dry ingredients into the mixture and blend until mixed.
  5. Add carob chips to mixture and blend until mixed.
  6. Fill each 4-1/8-inch by 2-inch mini bundt pan cavity with pupcake mixture. Bake for 20 – 22 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
