Whatever you do, don’t let those “hows” get in your way. You know those “hows,” right? How am I going to afford it? How am I going to meet that person? How do I relocate to that new city? Don’t get us wrong. The “hows” are essential for giving us direction. But, they should never consume us. They can slow us down if we’re not careful. Claiming “it” brings those “hows” right to our finger tips without even stressing over it.

For instance, I’m claiming a pupcake right now. I can definitely guarantee I’ll get one. I can feel it in my bones. The how, in my opinion, doesn’t even matter. That’s why…

Ingredients

Pumpkin Blueberry Oatmeal Muffin Pupcakes

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • ½ Cup Quaker Oats
  • 1 Tablespoon Olive Oil
  • ⅓ Cup Pumpkin Purée
  • ⅓ Cup Plain Yogurt
  • 1 Egg
  • 2 Tablespoons Blueberries

Instructions

Yields: 12 – 16 Mini Pupcakes

For Pumpkin Blueberry Oatmeal Muffin Pupcakes

  1. Preheat oven to 350°F.  Line 12 – 16 1.75-inch mini-muffin pan with paper bake cups and set aside.
  2. In small bowl mix together flour, baking powder, dried Quaker oats. Set aside.
  3. In a large mixing bowl add olive oil, pumpkin purée, yogurt, and egg. Beat on medium speed about 2 minutes or until combined.
  4. Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  5. Stir blueberries into mixture.
  6. Fill each cupcake liner with 1 tablespoon of pupcake mix.
  7. Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
