A few times a week these huge trash trucks come barreling through the neighborhood. They’re loud, make this huge screeching noise, and always manage to wake me up from my morning nap.
I mean, I get it. The trash has to be picked up. But why do my naps have to be interrupted in the process? I spend so much time yelling through the window at these trucks telling them to keep it down that I sometimes can’t get back to sleep. I spend the next few minutes rolling around on the floor trying to rock myself back to sleep. Until…
I got a whiff of these Carob Zucchini Pupcakes.
When I taste one, all trash truck noises completely fade to the background. This makes it so much easier to get back to my morning nap.

Ingredients
Carob Zucchini Pupcakes
- ½ Cup Brown Rice Flour
- 1 Teaspoon Baking Powder
- 2 Tablespoons Carob Powder
- ¼ Cup Olive Oil
- ⅓ Cup Plain Yogurt
- 2 Tablespoons Shredded Zucchini
- 1 Egg
Carob Frosting
- ¼ Cup Cream Cheese
- ⅓ Cup Plain Yogurt
- ½ Cup Carob Powder
Instructions
Yields 8 – 10 Mini Pupcakes
For Carob Zucchini Pupcakes
- Preheat oven to 350° Line 8 – 10 1.75” inch mini-muffin pan with paper bake cups and set aside.
- In small bowl mix together flour, baking powder, and carob powder. Set aside.
- In a large mixing bowl add olive oil, yogurt, zucchini, and egg. Beat on medium speed about 2 minutes or until combined.
- Add dry ingredients into the mixture and blend for approximately 2 minutes until well-mixed.
- Fill each cupcake liner with 1 tablespoon of cupcake mix and bake for 12 minutes. Cupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- Spread or pipe carob frosting onto the pupcakes.
For Carob Cream Cheese Frosting
- In large mixing bowl beat carob powder, cream cheese, and yogurt together on medium speed. Mix until fluffy. Frosting should have the consistency of whipped cream.
