Carob Banana Cream Pupcakes With Banana Frosting

The perfect treat for the times when it’s raining a little too hard to go outside.

Sometimes, it’s raining so hard, that I just refuse to go outside. You see, I’m not a fan of the elements. I don’t like rain because I hate getting wet. I don’t like the snow because it’s just too cold. And let’s not even get started on the sounds of thunder, heavy winds, and the sight of lightning.

So on those days when it’s pouring down rain, I prefer to just stay inside with my nose pressed against the window as I watch the drops hit the ground.

While I’m watching the rain fall, Mom bakes these Carob Banana Cream Pupcakes for a great pick me up.

They’re a nice little boost of energy for those days where the sky is gray and I miss the chance to lay in the sunlight to soak up some Vitamin D.

Bananas are already really sweet, and the carob filling makes it that much sweeter. Try it and let me know what you think.

Ingredients

For Banana Pupcakes

  • ½ Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 1 Tablespoon Olive Oil
  • ⅓ Cup Mashed Banana
  • 1 Egg

For Carob Banana Cream Filling

  • ¼ Mashed Banana
  • ¼ Carob Powder
  • 3 Tablespoons Plain Yogurt

For Banana Frosting

  • ¼ Mashed Banana
  • ½ Cup Plain Yogurt
  • ¼ Cup Coconut Flour

Instructions

Yields: 8 – 10 Mini Pupcakes

For Banana Pupcakes

  1. Preheat oven to 350° Line 1.75” inch mini-muffin pan with 8 – 10 paper bake cups and set aside.
  2. In small bowl mix together flour and baking powder. Set aside.
  3. In a large mixing bowl add olive oil, mashed banana, and egg. Beat on medium speed until combined.
  4. Add dry ingredients into the mixture and blend until mixed.
  5. Fill each cupcake liner with 1 tablespoon of cupcake mix and bake for 12 minutes. Cupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  6. Cut small hole in middle of cupcake. Fill with banana cream filling.
  7. Spread or pipe banana frosting onto the pupcakes.

For Banana Cream Filling

  1. In large mixing bowl beat mashed banana, yogurt, and carob together on medium speed. Mix until smooth.
  2. Cut small hole in middle of the cupcake. Fill cupcake with banana cream filling.

 For Banana Frosting

  1. In large mixing bowl beat flour, mashed banana, and yogurt together on medium speed. Mix until creamy. Frosting should have the consistency of whipped cream.
