Bark Brunch Chicken Quiche

Perfect for Sunday morning brunch lovers

Sunday is the one day a week my mom makes it a point to fix a big breakfast. Sometimes she fries bacon, other times she makes waffles, or she might just choose to have some salmon. Whatever she decides to make it always smells good.

In fact, I patiently wait at the entrance to the kitchen for her to give me a piece of whatever she’s making. Sometimes, I sit and pray that she’ll accidentally drop something on the floor so I can grab it. Either way, I want some.

This past Sunday, Mom decided to make me my very own special brunch…chicken quiche.

It was absolutely delicious. It had the perfect blend of chicken, kale, egg, and dare I say it…CHEESE. My mouth is still watering.

Ingredients

For Chicken Quiche

  • 2 ¼ Cups Fresh Baby Kale
  • ¼ Cup Cooked Chicken Breast
  • ¼ Cup Shredded Cheddar Cheese
  • 2 Eggs

Instructions

Yields: 4 Mini Quiches

For Kale

  1. Wash 2 cups of fresh kale thoroughly and discard stems.
  2. Add kale and 3 tablespoons of water into a pot.
  3. Cook kale on low for 20 minutes until tender.
  4. Place cooked kale in the mini pie pans. The kale will serve as the crust for the quiche.

For Chicken

  1. Preheat oven to 350° F. Line baking sheet with foil and place chicken on sheet.
  2. Bake chicken for 20 minutes until done. Use a meat thermometer to check temperature. Chicken is fully cooked at 170°
  3. Cut chicken into 1-inch cubed pieces

For Chicken Quiche

  1. Preheat oven to 350° Place cooked kale into 4 mini pie pans and set aside.
  2. In large mixing bowl add 2 eggs and beat until smooth.
  3. Add cooked chicken, cheese, and ¼ of uncooked kale to the egg. Beat on medium speed until combined.
  4. Fill each mini pie pans with mixture and bake for 20 minutes. Remove from pan and cool on wire rack.
