Gingerbread Pupcakes With Honey Cream Cheese Frosting

Well, there she goes again. Mom pulled out that purple bag with the handle and wheels. She’s filling it up with clothes as we speak. This basically means one thing…

I’m headed to grandma’s house for a few days until mom gets back from wherever she’s going.

Now, don’t get me wrong. Grandma is cool. She let’s me lay in her lap, sneaks me a few extra treats, and her house even has these giant steps that I can run up for fun. But Mom, well, she’s life. She just gets me. I miss her each and every time she goes away.

This time, however, Mom baked me some tasty gingerbread pupcakes.

Gingerbread was actually my great-grandpop’s favorite. Since today would’ve been his birthday, Mom thought these would be the perfect treat to hold me over until she gets back.

Well, off to Grandma’s house I go. While I’m there, I’d love to read your comments on the recipe.

Ingredients

For Gingerbread Pupcake

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • 2 Teaspoons Ground Ginger
  • ½ Teaspoon Ground Cinnamon
  • 1 Tablespoon Olive Oil
  • ⅓ Cup Plain Yogurt
  • 1 Egg

For Honey Cream Cheese Frosting

  • ¼ Cup Cream Cheese
  • ⅓ Cup Plain Yogurt
  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Honey

Instructions

Yields: 10 – 12 Mini Pupcakes

For Gingerbread Pupcake

  1. Preheat oven to 350° Line 1.75 inch mini-muffin pan with paper bake cups and set aside.
  2. In small bowl mix together flour, baking powder, ginger, and cinnamon. Set aside.
  3. In a large mixing bowl add olive oil, yogurt, and egg. Beat on medium speed until combined.
  4. Add dry ingredients into the mixture and blend until mixed.
  5. Fill each cupcake liner with 1 tablespoon of cupcake mix and bake for 12 minutes. Cupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  6. Spread or pipe honey cream cheese frosting onto the pupcake.

For Honey Cream Cheese Frosting

  1. In large mixing bowl beat cream cheese, yogurt, and honey together on medium speed. Mix until smooth.
  2. Gradually add in flour. Beat on high until creamy. Frosting should have the consistency of whipped cream.
