There’s no better way to celebrate pumpkin season than with this yummy Starbucks Pumpkin Latte inspired pupcake. It’s the perfect treat to add to your “Everything Pumpkin” list. Since I’m already a ball of energy and caffeine is an absolute no-no in any doggie diet, my mommy nixed the latte portion from the recipe. Which means…

Ingredients

For Pumpkin Spice Pupcakes

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Ground Cinnamon
  • 1 Tablespoon Olive Oil
  • ⅓ Cup Pumpkin Puree
  • ⅓ Cup Yogurt
  • 1 Egg

For Cream Cheese Frosting

  • ¼ Cup Cream Cheese
  • ⅓ Cup Plain Yogurt
  • ½ Cup Brown Rice Flour

Instructions

Yields: 12 Mini Pupcakes

For Pumpkin Spice Pupcake

  1. Preheat oven to 350° Line a 12 count 1.75 inch mini-muffin pan with paper bake cups and set aside.
  2. In small bowl mix together flour, baking powder, and cinnamon. Set aside.
  3. In a large mixing bowl add olive oil, pumpkin puree, yogurt, and egg. Beat on medium speed for approximately 2 minutes.
  4. Add dry ingredients into the mixture and blend for 1 minute until mixed.
  5. Fill each cupcake liner with 1 tablespoon of cupcake mix and bake for 12 – 15 minutes. Cupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  6. Spread or pipe pumpkin-cinnamon frosting on the pupcake.

For Cream Cheese Frosting

  1. In large mixing bowl beat cream cheese and yogurt together on medium speed. Mix until smooth.
  2. Gradually add in flour. Beat on high until creamy. Frosting should have the consistency of whipped cream.
