Sweet Potato Peanut Butter Pupcakes

It’s Sweet Potato Season.  While I have nothing against the smell of fresh pumpkin spice in the air, in my house sweet potato pie was on the dessert menu.  It wasn’t even a family dinner without sweet potato pudding.  And, don’t get me started on ow Sugar hovers around the kitchen when she smells sweet potatoes baking in the oven.  So, to kick off this sweet potato season right with these Sweet Potato Peanut Butter Pupcakes.

WHY WE LOVE THESE PUPCAKES

Sweet potatoes not only taste good, but they’re also considered a superfood for dogs.  Sweet potatoes are high in fiber, a good source of beta-carotene, and good source of vitamin A and C.  These Sweet Potato Peanut Butter Pupcakes are simple to bake, but will stand out at any pup party.

WHEN TO BAKE THESE PUPCAKES

The lazy days of summer are over and fall is here, which means my calendar is booked.  Sometimes this means leaving Sugar at home by herself a little longer.  These Sweet Potato Peanut Butter Pupcakes are a great fall treat for your dog.  Especially during those cozy moments when you’re bonding with your dog after working all day.

  • 8 – 10 Mini Pupcakes

Ingredients

Sweet Potato Pupcakes

  • 1/2 Cup Whole Wheat Flour
  • 1 Teaspoon Baking Powder
  • 1 Tablespoon Olive Oil
  • 1/3 Pureed Sweet Potatoes
  • 1/4 Cup Plain Yogurt
  • 1 Egg

Peanut “Buttercream” Frosting

  • 1/2 Cup Creamy Peanut Butter (Unsalted with no added sugars)
  • 1/4 Cup Plain Yogurt

Instructions

For Sweet Potato Pupcakes

  • 1Preheat oven to 350° F. Line 8 – 10 1.75-inch mini-muffin pan with paper bake cups and set aside.
  • 2In small bowl mix together, flour and baking powder. Set aside.
  • 3In a large mixing bowl add olive oil, pureed sweet potatoes, yogurt, and egg. Beat on medium speed about 2 minutes or until combined.
  • 4Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
  • 5Fill each cupcake liner with 1 tablespoon of pupcake mix.
  • 6Bake pupcakes for 13 – 15 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. The top of the pupcake should also be firm. If pupcakes aren’t done after 13 – 15 minutes, let them bake for another 2 – 3 minutes. Remove from pan and cool on wire rack.
  • 7Pipe or spread peanut “buttercream” frosting on each pupcake.

For Peanut “Buttercream” Frosting

  • 1In a large mixing bowl beat yogurt and peanut butter together on medium speed. Mix until creamy.
  • 2Pipe or spread peanut “buttercream” frosting on each pupcake.
