I love meeting new humans. Nothing makes me happier. Why? Because they sure know how to give a whole lot of love. Anytime the door bell rings I get really excited. Especially if they have an awesome scent.

And if they do, I’ll give a few high pitch barks and a tail wag. If that doesn’t work, I’ll let out a whine so loud that anyone would feel guilty. That usually works. Who wants to be blocked off from all the action? I sure don’t. So, I’ve become a master at pulling on heartstrings.

Ingredients
Apple Pie Pupcakes
- 1 Cup Whole Wheat Flour
- 1 Teaspoon Baking Powder
- 2 Teaspoons Ground Cinnamon
- 2 Tablespoons Olive Oil
- 2 Tablespoons Pure Honey
- 2 Eggs
Apple Pie Filling
- 1 Apple
- 2 ¼ Teaspoons Water
- 1 ½ Teaspoons Olive Oil
- 4 Teaspoons Pure Honey
- 1 Teaspoon Cornstarch
- ¼ Teaspoon Ground Cinnamon
- 1 ½ Teaspoons Water
Á La Mode Topping
- ½ Cup Plain Yogurt
- 1 Tablespoon Honey
- 1 Dash of Ground Cinnamon (Optional)
Instructions
Yields: 12 Mini Pupcakes
For Apple Pie Pupcakes
- Preheat oven to 350°
- In small bowl mix together flour, baking powder, and cinnamon. Set aside.
- In a large mixing bowl add oil, honey, and eggs. Beat on medium speed about 1 minute or until combined.
- Add dry ingredients into the mixture, and blend for approximately 2 minutes until well mixed.
- Scoop 1 tablespoon of pupcake mix into a 1.75-inch mini-muffin pan, and bake for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake, and it comes out clean. Remove from pan and cool on wire rack.
- Cut small hole in middle of pupcake. Fill with apple pie filling.
- When ready to serve, reheat the pupcake with apple pie filling in the microwave for approximately 10 to 15 seconds. Add 1 tablespoon of the á la mode topping.
For Apple Pie Filling
- Peel, core, and slice apple. For reference, my apple slices were about the size of a cube of sugar.
- Add olive and cinnamon into a saucepan and stir over medium heat.
- Stir in apples, honey, and 2 ¼ teaspoons of water.
- Cover and cook filling for 8 to 10 minutes, or until slightly softened. Stir mixture occasionally.
- In a small dish combine cornstarch and 1 ½ teaspoons of water.
- Once apple mixture is done, add cornstarch and water mixture to the saucepan. Stir for approximately 1 minute until filling is thickened. Let it cool.
- Cut small hole in middle of pupcake. Fill with apple pie filling.
For Á La Mode Topping
- In large mixing bowl beat yogurt, honey, and cinnamon (optional) together on medium speed until combined.
- Poor mixture into a plastic container and freeze for approximately 2 ½ to 3 hours until frozen. Mixture should be a little soft to allow for scooping.
- When ready to serve, reheat the pupcake with apple pie filling in the microwave for approximately 10 to 15 seconds. Add 1 tablespoon of the á la mode topping.
- Keep the container of á la mode topping in the freezer until ready to serve again.
