I can’t be the only one who wants to pull the covers over her head for another 5 minutes of sleep. Rainy mornings are always the perfect formula for sleeping in. It’s dark, quiet, and the only sound I hear is the tap of raindrops hitting the roof.

When I do finally drag myself out of bed, I tend to move slower than normal. Ten-minute morning routines turn into 20, and morning stretches are usually coupled with a big yawn. Although rainy days aren’t necessarily the most energetic or upbeat for me, I have learned to embrace them by remembering to…

It’s soothing and calms me down. In life, we get so engrossed in rushing from one place to the next; from one chore to another that we can forget to take it slow. Slowing down from time to time gives our mind, body, and soul a chance to regroup. Whether we recognize it or not those rainy mornings give us an excuse to do just that.

Ingredients

Banana Blueberry Bread Pupcakes

  • 1 Ripe Banana
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Baking Powder
  • 2 Tablespoons Pure Honey
  • 1 Egg
  • ½ Cup Whole Wheat Flour
  • 3 Tablespoons Blueberries

Instructions

Yields: 2 Mini Loaf Bread Pupcakes (12 to 16 Bread Slices)

For Banana Blueberry Bread Pupcakes

  1. Preheat oven to 350° F.
  2. In a large mixing bowl, mash ripe banana and add olive oil. Mix together for approximately 1 minute until smooth.
  3. Add in baking powder. Mix together for approximately 1 minute.
  4. Add eggs. Mix together for approximately 1 minute.
  5. Add flour. Mix together for approximately 1 minute.
  6. Add blueberries. Mix together for approximately 1 minute.
  7. Add mixture to 2 mini loaf pan cavities in a 3.8 x 2.5 inch mini loaf pan. I used the Wilton Cavity Mini Loaf Pan.
  8. Bake for 22 to 25 minutes. Mini loaf bread pupcakes are done when you can stick a toothpick into the bread, and it comes out clean. Remove from pan and cool on wire rack.
  9. Slice and serve to your pup. You should be able to get 6 to 8 slices per loaf.
