Apple Pupcakes With Cinnamon-Cream Cheese Frosting

These apple pupcakes are the perfect solution to cure a long day of footsteps on your roof.

Today, per usual, I’m sitting next to the window after my morning walk, completely enjoying myself. Rolling around in the sunlight, barking at the squirrels in the trees, and waiting to speak to all my pup friends that walk pass.

Then out of nowhere I hear a ton of footsteps on my roof. Immediately, I think. Who would have a party without me? Then I realized the music sounded a lot like the sound of my mom hanging pictures on her wall, except louder and longer.

Come to find out those footsteps and loud noises were just humans fixing our apartment roof. However, my usual day of staring out the window turned into a day of me hiding under sofas and in corners to get away from the sound. Well, guess what…

One taste of this apple pupcake turned my day completely around.

These delish mini pupcake treats are topped with cinnamon cream cheese frosting. It’s certainly everything you want in an after dinner dessert, especially after a long day of endless thumps and footsteps on your roof.

Ingredients

For Apple Pupcake

  • ½ Cup Brown Rice Flour
  • 1 Teaspoon Baking Powder
  • ¼ Teaspoon Ground Cinnamon
  • ¼ Teaspoon Ground Ginger
  • 1 Tablespoon Olive Oil
  • ⅓ Cup Unsweetened Applesauce
  • 1 Egg

For Cinnamon-Cream Cheese Frosting

  • ¼ Cup Cream Cheese
  • ⅓ Cup Plain Yogurt
  • ¼ Cup Coconut Flour
  • 1 Teaspoon Ground Cinnamon

Instructions

Yields: 10 12 Mini Cupcakes

For Apple Pupcakes

  1. Preheat oven to 350° Line 1.75” inch mini-muffin pan with paper baking cups and set aside.
  2. In small bowl mix together flour, baking powder, cinnamon, and ginger. Set aside.
  3. In a large mixing bowl add olive oil, applesauce, and egg. Beat on medium speed until combined.
  4. Add dry ingredients into the mixture and blend until mixed.
  5. Fill each cupcake liner with 1 tablespoon of cupcake mix and bake for 12 minutes. Cupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
  6. Spread or pipe cinnamon-cream cheese frosting on the pupcake.

For Cinnamon-Cream Cheese Frosting

  1. In small bowl mix together flour and cinnamon. Set aside.
  2. In large mixing bowl beat cream cheese and yogurt together on medium speed. Mix until smooth.
  3. Gradually add in flour and cinnamon mixture. Beat on high until creamy. Frosting should have the consistency of whipped cream.
