It’s so easy for us to get caught up in problems, issues, and situations that we can’t stand. However, for every question there is an answer. For every cause there is an effect. And, for every problem there’s definitely a solution. Eldridge Cleaver said…

However, when our needle gets stuck on talking about those problems with no plans to solve them, then it’s nothing more than complaining.
Solutions not only encourage us to want change, but drive us to be the change we want to see. They even spark creativity and evolution. Solutions also encourage hope, communication, and even create culture.

Ingredients
Banana Blueberry Muffin Pupcakes
- ½ Cup Brown Rice Flour
- 1 Teaspoon Baking Powder
- 1 Tablespoon Olive Oil
- 1 Mashed Banana
- 1 Egg
- 2 Tablespoons Blueberries
Blueberry Frosting
- 2 Tablespoons Blueberry Powder (Made with Trader Joe’s Freeze Dried Blueberries)
- ¼ Cup Plain Yogurt
Instructions
Yields: 10 – 12 Mini Pupcakes
For Banana Blueberry Muffin Pupcakes
- Preheat oven to 350° F. Line 10 – 12 1.75-inch mini-muffin pan with paper bake cups and set aside.
- In small bowl mix together flour and baking powder. Set aside.
- In a large mixing bowl add olive oil, banana, and egg. Beat on medium speed about 2 minutes or until combined.
- Add dry ingredients into the mixture and blend for approximately 2 minutes until well mixed.
- Stir blueberries into mixture.
- Fill each cupcake liner with 1 tablespoon of pupcake mix.
- Bake pupcakes for 12 minutes. Pupcakes are done when you can stick a toothpick into the cake and it comes out clean. Remove from pan and cool on wire rack.
- Spread or pipe blueberry frosting onto the pupcakes (optional).
For Blueberry Frosting (Optional)
- In a blender, blend freeze-dried blueberries for approximately 1 to 2 minutes until they become a powder.
- In large mixing bowl beat yogurt and blueberry powder together on medium speed. Mix until combined.
- Spread or pipe blueberry frosting onto the pupcakes.
